Memorial Day WW's Style

Grilling on Memorial Day is a tradition but it can be a bit of a challenge unless you want chicken breasts ... again. So it's all about having a plan and a bit of forethought.

The problem with hamburgers is the size of the pattie (yes size matters). So the solution is one that is going to make you cry... literally. First off ground beef 93/7 is an absolute. Using the like 80/20 stuff is going to kill you. Aldi's carries 93/7 incidentally.

Hamburgers (2pnts)
1 pound uncooked lean ground beef (with 7% fat)
1 large Vidalia onion
1 bulb garlic
2 tbsp Worcestershire Sauce

Now that you've got your ingredients the part that is going to make you cry. The above recipe is for 8 burgers. 1/8th of a lbs of ground beef isn't a big burger. So we need to bulk up the meat. So you get a big bowl and a grater. Grate the onion into the bowl. It's going to release a lot more of the liquid in the onion so you'll cry a lot. Do your best not to look. But you're still going to cry. Once you grate a really large onion into the bowl put the ground beef into the bowl. Add a full bulb of minced garlic (We buy the big jars at the grocery store) and 2 tbsp of Worcestershire Sauce. Mix thoroughly and spread out some wax paper. Use a 1/3 of a cup measure and make each burger about 1/3 of a cup volume. Throw them on the grill and you're good to go!

WW Cook books have lots of potato salad recipes and... most of them I don't like. The truth is that potato salad the way my Mom made it has 2 things that make it point wise no good, the egg yokes and the Miracle Whip. So lets just git rid of them...

Potato Salad (4pnts per Cup)
1 tsp French's Classic yellow mustard
6 egg white
1 3/4 pound potato
4 Tbsp Kraft Miracle Whip Light Salad Dressing
6 tsp relish
1 salt, to taste
1 black pepper, to taste

Boil Eggs, shell and then remove the yokes and chop. Clean, chop and boil potatoes, add everything and stir until it's what you like your potato salad to be like. Ta-da done. The Miracle Whip Light's biggest difference is that it's not as dense as Miracle Whip, when you're mixing it into something like this there's really no difference.




So 2 Burgers with buns and cheese: 7pnts
1 Cup of Potato Salad 4pnts
Tomato Slices: 0pnts
Crystal Light: 0pnts
Diet Mt Dew: 0pnts
Grand Total: 11pnts of very full goodness.
