quinoa & edamame salad

quinoa & edamame salad
1 c dry quinoa
1/2 c shelled edamame
1 can corn
2 cloves minced garlic
1/4 c olive oil
1/4 c lemon juice
sea salt to taste
(any other veggies, herbs, seasonings to taste)

boil 2 cups water & add 1 cup quiona, simmer for 15 minutes. cool quiona. add edamame, corn, garlic, olive oil, lemon juice and salt - mix. refrigerate.

1/2 c = 2.5 WW points
