cellaring input?
yay! I stayed up lateish tonight to catalog my wines - that is wrap ribbons around the bottles, the better to identify which to drink now and which to leave around for a while. I'm just stuck on a couple of bottles: I came into a bottle of Jaffurs 2005 Syrah (Santa Barbara) and a Vina Robles 2004 Petite Sirah (Paso Robles). Yes, I know they're different varietals.

I'm looking for some input on how long to cellar them... I'm a little sketchy on dealing with either. Though I've been eying the Vina Robles and may just say screw it and open it up soon.

Keep them until you feel like drinking them. Personally, I wouldn't hold on to either of them for more than a year or two.

Do you know if you prefer the taste and feel of youthful wine, or that of bottle age? If you find yourself hunting down the latest release at your local wine shop and skipping over the dusty bottles (ignoring any potential price difference), then that might offer some insight into how these wines will show best for you.

I have found that a lot of the Cali Sirah and petite syrah dont have a ton of aging capacity. not to say they cant do it it just doesnt make that much difference they are still fruit bombs, granted that Jaffurs is great, I just think break it out with a good meal.

According to my hubby, don't open them yet.....not until at least 5 years from the vintage....by the way, Paso Robles is his favorite region.......patience!!!!!!

We were told by a wine guy in Napa who really seemed to know his stuff to let it sit for 3 years from the year on the bottle. But, we were also told by a few of the winemakers and vineyard owners themselves that some are just as good a year after sitting. Sometimes you just can't wait!

I'm probably not an expert, as California reds aren't really my thing, but I do enjoy a Pet Sirah every now and again. In my experience, these are menat to be drank, not cellared. And, while the 2005 vintage specifics are lost on me, Syrahs can generally keep for a very, very long time. So if you're choosing one to drink now, I'd go with the Paso Robles. Enjoy!
