BBQ jerk skewers
this weekend i hosted a BBQ with my SO. i was the only veggie there but we made veggie skewers for everyone and a portabello burger for me (along with meaty things for everyone else). the skewers were loved by all, so i wanted to share the ridiculously easy recipe. sorry no pics...

BBQ jerk skewers

ingredients:
- red peppers
- onion
- portabello mushroom
- cherry tomatos
- extra-firm tofu
- mango
- pineapple

sauce:
- jerk marinade (from a bottle. try larger supermarkets or "ethnic" stores)
- bbq sauce (we used honey-garlic, but you can use whatever type you want. be sure to check the ingredients because i realized only the day after that there were anchovies in it :( )

non-food ingredient:
- skewer sticks (we bought metal skewers because they're reusable, and because bamboo ones are splintery sometimes)

you can use any veggies you want. the mango & pineapple came to me when we were watching "sneakers". in hindsight i think plantain would've been awesome as well.


directions:
- chop the ingredients into bite-sized pieces
- stab ingredients onto skewers (i'm a bit OCD so each piece could not be beside a piece of the same colour)
- jerk marinade is freaking SPICY so what we did was we put a good amount in a bowl and cut it with BBQ sauce. the ratio was at least 60% BBQ sauce and the balance jerk sauce. taste it before you marinade because you don't want to set your friends' mouths on fire. liberally brush the skewers with the marinade mix and place in refrigerator for at least an hour to absorb flavour.
- BBQ those crazy sticks! barbeque until there is some black on the skewers.
- consume.

Sounds fantastic! I'm not a vegetarian but I prefer veggies to meat, and jerk was the one thing I couldn't decide how to do with vegetables. Thanks so much! I'm totally trying this.

np :) i wanted to get some roasted "chicken" pieces from a store that sells them frozen but didn't have enough time to do so. i'm sure you could use some sort of meat analog if you like, or just your favourite veggies!

Walkerswood makes some of the most authentic Jamaican jerk marinades you can get in a bottle (including a mild jerk marinade). http://www.walkerswood.com/ranges.asp?catid=1

Of course, there are also tons of homemade jerk marinade recipes to be found online via Google.

This recipe sounds delicious! I have to admit that two things I really miss being able to enjoy since I stopped eating meat are BBQ and hot wings, so any kind of alternative that lets me at least enjoy the sauce is more than welcome!

sweet thanks for the marinade recommendation! there were a couple brands there and i wasn't really familiar to any of them so i just randomly picked one.

i originally got the idea from a veggie cookbook i have (it had a recipe for jerk sauce) but as i am a very lazy person, i opted for the bottled route.

i didn't really like bbq much either as a veg but those skewers won my heart. the meaty dish i missed most was satay chicken skewers with peanut sauce. then i realized that the chicken merely acted as a carrier for the sauce...
