Hello, I have quite a few cans of Campbell's Vegetarian Vegetable Soup.. but, I haven't been eating them because they taste ..well... not-so-great, but they are handy to have around (especially during the winter) so I was wondering if anyone had any ideas on how to spice it up a bit? TIA!

Ingredients:
Tomato puree (water, tomato paste), potatoes, carrots, water, peas, corn, diced tomatoes in tomato juice, green beans, high fructose corn syrup, enriched macaroni product (wheat flour, egg white solids, niacin, ferrous sulfate, thiamine mononitrate, riboflavin, folic acid), modified food starch, contains less than 2% of the following ingredients: onions, celery, salt, monosodium glutamate, yeast extract, onion powder, dehydrated garlic, spice, flavoring, oleoresin paprika.

I deleted my folder with Vegetarian/Vegan websites and recipes. I already checked my recycling bin and it is not in there. :) I should be more careful when cleaning up my computer. If someone can help me with some websites and recipes they love. Thanks.
Also simple and easy Vegetarian recipes too. The websites were recipe websites,news websites,clothing websites. It was just a big misc of them I have been told about through the years or read about somewhere. I am googling websites now, but you never know what I might miss. Thanks everyone.

I am not really a vegetarian, I am a meat eater, however I am curious about the food and the lifestyle as I am trying to eat healthier and cut back on the amount of meat that I do eat. I have been looking at recipes on other sites as well and am glad I stumbled on to this community due to the spotlight.

I have a question for everyone and this might be a great help to my endeavor to eat differently.

What food items do you keep in the pantry, including spices and such?

I am going to attempt to make granola to snack on this weekend and when I was looking up recipes many of them called for stuff like flax seed and wheat germ, two things that I have never tried in recipes before, so I tend to avoid stuff like that as I have no idea where to get it in a store that isn't Whole Foods and therefore really expensive.

I was also going to make Roasted Red Pepper Hummus this weekend as well and have no idea where to find the Tahini paste it calls for, but I got a recipe for it, now I have to find a source for sesame seeds in bulk as I am unwilling to pay the 4 dollars a bottle for McCormick ones where I don't even get enough for my recipe. If you have any suggestions or help. It would be greatly appreciated.

I'm a self proclaimed slacker and a vegetarian since 1979.
Believe me this is easy to make or I wouldn't make it!
This recipe has a traditional stuffing taste like mom's or grannies:

Vegetarian Stuffing Baked in Dish

1 bag of bread crumbs (anything like Pepperidge Farm bread cubes)
1 large onion
6 pieces of celery
1 cup pecans- chopped coarsely
1 stick of butter
1/2 cup (or more to your taste) of chopped fresh sage leaves
1 tablespoon thyme
salt and pepper( to your taste)

Sauté celery, onions, pecans, sage, thyme, salt, pepper in a large frying pan in the stick of butter with the lid on the pan to create a broth like wet mixture. Stir mixture occasionally as it simmers.
Cook until done (such as onions become soft and clear and celery is softer)

In a large mixing bowl: add bag of bread cubes and pour in cooked ingredients including the juices, and stir well.

Place mixture into a buttered glass baking dish about 9 x13 size.
Bake in regular oven for approximately 45 minutes at 350 (do not microwave)

Hi all!

So glad this community was spotlighted! I definitely fit the "lazy vegetarian" description!

My sister, brother-in-law, and I are having a vegetarian Thanksgiving together. I've been veggie 21 years, the other two only a few years, but they love to cook and experiment with veggie foods. So, our first big question was whether to have Tofurkey or not. I finally got some last year to try, and I thought it was okay but not great. I'd rather just do without it, myself, but bro-in-law might want it to carry on the T-day "tradition." What's your take on it? Anyone love it? Have any unique ways of preparing it? Any other brands out there that are better?

I'm in charge of making bread and bringing a side dish. I was going to do creamed spinach. Anyone have and easy, tasty recipe? None of the three of us are vegan, but I'd welcome a vegan version, if anyone has one. Or I might make a quiche. A friend of mine made one recently, and instead of using a pie-type crust, she used thinly sliced potatoes. It was awesome!

Oh, man, am I going to love this group! **salivates** :)

I'm not a true vegetarian, actually, since I still eat fish and crustaceans. That makes me a pescetarian. But I do follow a largely vegetarian diet most of the time. I was drawn to the "easy recipe" feature of this community and look forward to getting and contributing some good ideas for meals. ^_^ I'll come back and share some of my home-invented recipes very soon! ....And since you guys are all veggies, I'll skip anything with seafood! ;)

02:49 pm - PETA: An Angel From Heaven or That Annoying Telemarketer That Won’t Stop Calling?
I got this idea from some responses to a previous post. How does everyone feel about PETA? Is it doing any good or does it hurt the Vegetarian cause?
I thought about going Vegetarian before I learned of PETA. PETA only just made me feel horrible when I watch the farm videos. I heard some bad stuff though which I am not sure if it is true about PETA blowing up pet stores. I heard this a while back ago. I show PETA to people I talk about Vegetarianism with. I figured it would make them sick to their stomach. I just cook something awesome and let everyone decide.

So I traditionally buy a Tofurky for dinner, but I kinda wanted to go a different route this year and make one from scratch. My only issue is, I'm limited on time. I've looked up many recipes that seem like they would work for me, but if anyone has any pointers, especially regarding my time limitations, I'd appreciate them!

My situation: I live in a dorm (so no preparation until I'm home)... I'm going home for Thanksgiving Wednesday night (I have class during the day), and won't arrive until like 8. Then I work the next day from 4 to 12:30AM. By that time, I'm probably not going to be in the mood to eat, so I'd ideally like to eat my creation around 3pm that day.

I am not looking for the morning star kind. I'm looking for the on-the-bone smooth meat type. I doubt its possibility, really.

I've been veg for a year now, and its truly the only thing I really miss.

So I am trying to get my friend to look at the Vegetarian lifestyle. I have showed him PETA Videos, GoVeg.com and showed him my copies of Vegetarian Times. What can I do to show to show him about Vegetarianism. He thinks PETA is all made up and keeps saying something about in the bible it says we can eat meat. I do not feel like I am doing a very good job.

I've been a vegetarian for 3 years but I eat a lot of carbs because the morning star and boca products get old.

I don't like beans especially black beans which seems to be in EVERY vegetarian buritto! and I love burittos just not black beans.

Anyway has anyone ever heard of or have vegetarian meatloaf? I use to love meatloaf when I age meat, I was just curious if that would be even be possible?

11:45 am - A recipe I kind of threw together
I am a fan of savory foods. I like garlic, mushrooms, and onions especially...so I decided to use my favorite spices and foods in a dish. It doesn't have a name but it's pretty simple and in my opinion, delicious. <3

1 Tablespoon of extra virgin olive oil
1 4 oz. can of mushrooms
1 Tablespoon of garlic
1/2 of a small onion chopped...I'd say that would be 1/4 cup
1 cup of cooked rice
1 capful of soy sauce

In a large pan, Sautee' the mushrooms, onions and garlic in the EVOO at about medium high heat until the onions are translucent. Mix in cooked rice and soy sauce. Mix the food up until the rice is brown. Turn off heat and serve. I would say that this would serve about 2-4 people depending on how hungry they are. ^_^

I have a question and a recipe offering.

First, the recipe. What's lazy about this recipe is that you can put the muffins in freezer bags. Microwave frozen muffins for about 45 sec and enjoy.

The cloves might be left out if you don't like the taste. (If cloves are cut out, the other seasonings might need to be adjusted like one reviewer suggested to 2 1/4 t cinnamon and 2 1/4 t nutmeg) I leave out the nuts and use dried cranberries instead of raisins.


My question is, does anyone have any quick and easy vegetarian cookbook recommendations? I'm not a big fan of tofu (I've never been able to make it taste good to me).

So far, I have on my to try from library before I buy list:

Starving Student's Vegetarian Cookbook

I have tried the Teen's Vegetarian Cookbook and 5 Ingred. Vegetarian Gourmet. The teen book had a good intro. to veg. nutrition. The 5 ingredient book did have some recipes I liked.

Hi everyone,

I saw this community pop up on my friends page in [info]ljspotlight and it seriously describes my life perfectly.  I've been vegetarian/ on and off vegan for about 2 years now. I say on/off vegan because sometimes I'm just too damn lazy to be strictly vegan every single day.  But I try, hehe.

Now, don't get me wrong, I love to cook, but I don't like spending 3 hours in a kitchen cooking a meal and then 2 hours afterward cleaning up the mess.

My solution?  Well, my mom gave me this book that she previously owned, and it's perfect for lazy/busy cooks.  But... most of them have meat and dairy in the recipes.  However, I have tried a recipe and added a couple of alterations and it came out really well!  And I would like to share with you!  Let me know what you think.



Best part? You only have one pan to clean! YAY!

Another idea/recipe I had was for vegan tacos.  I kind of cooked this on a whim and completely made this one up, so bear with me!

This used to be one of my favorite recipes... right up until we went vegetarian... :D

But! I tried it the other day using soya fillets (any vege chicken replacement would work I guess) and it totally worked. So Honey Mustard not-Chicken is back on the menu.

It's really easy - ingredients are basically chicken-replacement, honey, mustard and water. Oh, and lemon juice!

The chicken replacement I used (I'm in New Zealand) is Sanitarium Vegie Delights Soya Fillets.

I would like to make a good batch of chili using tempeh. I have seen a myriad of recipe ideas but I've only cooked tempeh twice - opened the package, crumbled half and made tacos, chopped the other half to marinade for stir fry. I've seen suggestions of steaming it before cooking (don't have a steamer so I'm not 100% sure how to steam it correctly) ... regardless, I was hoping that some of you very knowledgeable folk out there had recipes you have made and love, using tempeh, and could share with me. Specifically, I want to make CHILI! As a side note ... I don't handle spicy things very well and I hate mushrooms and chickpeas. Thank you :-D

Good news everyone! I've joined to ask what your favorite vegan brownie mix is!

My girlfriend and I have been veggies for a little over a year now, and are going the way of the vegan now. We've been replacing the egg brownie mixes call for with silken tofu for a while now, but we want to make sure the rest of the mix we're using is vegan as well.

Our favorite up until now is the Ghirardelli Dark Chocolate brownie mix, but my gal thinks she remembers seeing milk pop up in the ingredient list.

Any suggestions or recommendations? Thank you!
