Aloo Gobi Recipe (direct from the DVD extras for "Bend it like Beckham")
Aloo Gobi

Ingredients

1/4 cup vegetable oil
1 large onion, peeled and cut into small pieces
Large bunch of fresh coriander, separated into stalks and leaves and roughly chopped
Small green chilies, chopped into small pieces (or one teaspoon chili powder)
1 large cauliflower, leaves removed and cut evenly into eighths
3 large potatoes, peeled and cut into even pieces
1 LARGE 28oz can of diced tomatoes with juice (or two regular cans)
Fresh ginger, peeled and grated
Fresh garlic, chopped
1 Teaspoon Cumin seeds
2 Teaspoons Turmeric
1 Teaspoon Salt
2 Teaspoons Garam Masala

Heat vegetable oil in a large saucepan.

Add the chopped onion and one tablespoon of cumin seeds to the oil.

Stir together and cook until onions become creamy, golden, and translucent.

Add chopped coriander stalks, two teaspoons of turmeric, and one teaspoon of salt.

Add chopped chillis (according to taste)

Stir tomatoes into onion mixture.

Add ginger and garlic; mix thoroughly.

Add potatoes and cauliflower to the sauce plus a few tablespoons of water (ensuring that the mixture doesn't stick to the saucepan).

Ensure that the potatoes and cauliflower are coated with the curry sauce.

Cover and allow to simmer for twenty minutes (or until potatoes are cooked).

Add two teaspoons of Garam Masala and stir.

Sprinkle chopped coriander leaves on top of the curry.

Turn off the heat, cover, and leave for as long as possible before serving.

::comes in about 8 months late, thanks to Google::

Grown coriander = fresh cilantro. Green herb that looks rather like Italian parsley. Cilantro's called coriander in Britain.

Thank you so much for posting this and including that it was from the DVD, this makes it come up great in a google search! We rented the movie last year and tried the recipe and we LOVED IT! We subsequently lost the paper we had written the recipe down on. I tried a recipe from the internet and it did not come close and we threw most of the batch out. This recipe is awesome. It is simmering on the stove now in preparation for Sunday dinner! Thank you,Thank you, Thank you!

Sorry to want specifics. Would that be a large can - 28oz and would it include the juice. Seems like a lot if I were to use 2 cans. Or is it the small size around 15 oz or 19 oz? Also how many green chilis did you use.

Oh, dear; I'm sorry! I use the 28oz can with the juice. If it's too runny, just cook it longer and let it reduce.

I like doing it this way and not adding much water.

Do you have a recipe for Aloo Chana? The best I've had was at an Indian Restaurant featuring Northern Indian cooking.

googled
[info]chuckdarwin

* 2-3 Tbsp olive oil
* Cumin seeds
* 1 medium onion (chopped)
* 3-4 cloves of garlic (chopped or crushed)
* 1-2 tins of tomatoes to taste
* 2 Tbsp tomato puree
* 1-2 tsp ground cumin to taste
* 1-2 tsp ground coriander, or fresh to taste
* 1-2 tsp salt to taste
* 2 tins of chickpeas
* 2 large potatoes cut into cubes (can pre-cook it for speed)

Heat oil, throw a few cumin seeds in to test temperature, fry onions and garlic until soft and brown (but not burnt). Add tomatoes, spices and salt and stir. Then add puree. Add chickpeas and potato and cook until potato is tender. Tasty when sat a while to absorb flavours. Delicious served with pitta bread and salad.

I'm actually watching Bend It right now. I've never had Aloo Gobi and have wanted to ever since seeing the film. My Indian friend wanted the recipe and I'm happy you took the time to jot it down. Thanks for taking the time.

Aloo Gobi has always been my favorite indian dish. When she said that line in the movie I laughed out loud. I never have had a chance to try this particular version though, but I do like the sauce base with tomatoes that she uses, that isn't in a lot of recipies I've seen.

That's how I usually try to make it, but never follow any exact directions. When cooking for a larger crowd the measurements dont scale too accurately so I usually end up winging it and adding ingredients "to taste."

Quick question: is it a tablespoon of cumin seed, or a teaspoon? The ingredients list say a teaspoon, the directions say a tablespoon.
