supermarket friendly, no baking recipes
Just got Veganomicon and I want to ask your guys' opinion on whether to try the following recipes. I know there are a lot of these posts, but these are specifically the


Although I do have a Whole Foods nearby...I'm broke, so I try to do most of my shopping at a regular grocery store. Also I don't have a conventional oven (only a toaster oven), so I've eliminated recipes that require baking.

-Greek style tomato zucchini fritters w. fresh herbs (pg 52)
-Blueberry corn pancakes (76)
-Quinoa salad with black beans and mango (84)
-Chile cornmeal crusted tofu (125)
-Porcini wild rice soup (140)
-Baked potato and greens soup with potato wedge croutons (146)
-Spicy peanut and eggplant soup (147)
-Tomato and roasted eggplant stew with chickpeas (179)

Plus these, if I decide to "splurge" on a meal
-Cholent (182)
-Pineapple cashew quinoa stir fry (175)
-Acorn squash, pear, and adzuki soup with sauteed shiitakes (136)
-Grilled yuca tortillas (49)


Of course, if you have any other suggestions PLEASE feel free to recommend them!

I made the Spicy Peanut and Eggplant Soup the other day. I don't like spicy food, so I omitted the chille and added bell pepper instead. It was good but I didn't cream my jeans over it. I felt like it would have been better with more eggplant. The string beans in it seemed out of place.

I did the pineapple cashew quinoa stir fry once. It was totally good, but something in it gave it an odd taste to me. I think they call for some kind of wine to be added? I think that's what made me go "eh?" I'd leave it out next time. There are just a lot of flavors for one dish.

Blargh. I just typed out a whole long response, but then my computer ate it.

Of those recipes I've only made the greens and potato soup. I like greens, and I like potatoes, but together? I wasn't thrilled. And I felt like the croutons would have been better on the side with ketchup.

Other recipes I like that seem to fit your criteria:

-black beans in chipotle adobo sauce (Okay, I'll admit it, I like anything with chipotles. the recipe is pretty simple and not super exciting, but it's also easy and not super expensive. trade off!)

-hot sauce glazed tempeh. I love, love, LOVE this. I use the pan frying method when my oven is busy and it works pretty well. I also like the smoky grilled tempeh and the accompanying sauteed collards.

-Tomato-rice soup with roasted garlic and navy beans: recipe calls for oven use, but you can roast the garlic in your toaster oven. The ingredients are simple, and pretty cheap!

-Manzana chili verde. I'm cheap so I usually use cooking wine or just substitute veggie broth for the wine. I guess not all normal grocery stores sell tomatillos and poblano peppers, but my super cheap discount grocery store does, probably because of the local mexican population.

-marinara sauce and variations. Okay, so I shouldn't need a recipe for this. But it's a GOOD recipe, and the sauce is tastier/cheaper than a lot of the jarred varieties.

I don't like mushrooms or eggplant, which is probably why I haven't tried a lot of the recipes on your list. :-)

OH MY! Please try the chocolate chip brownie waffle. It is amazing. I make it without the soy yogurt and it is thicker and more like cake :]

omg I just got this book too! It's amazing! You should seriously try the other recipes too! I know that a lot of the ingredients are hard to find but it's sooo worth it. This book is amazing! I'm a poor student too so I know what you mean. But a lot of the ingredients can be left out or replaced (like instead of using chickpea flour use normal flour), and I never cook with wine.
Ok so anyways, the greek style tomato and zucchini fritters are good, but I can never seem to get the centre to cook very well. And mine always fall apart. I wouldn't consider these to be a food good for left overs, but they are very tasty regardless!
I highly recommend the Autumn Latkes, the Roasted Portbello salad with spicy mustard dressing (you said you don't have an oven, but maybe you could just marinade them and eat them raw?), Chickpeas Romesco, the Autumn Root salad (you could use canned beetroot since you can't roast the beets), Red Lentil Curry, god I could go on!
Also, the book always says to use a food processor to shred some of the food, but I don't have one of those so I just use my hand held grater.

I love the Pineapple-Cashew-Quinoa Stir-fry. It actually didn't sound that good when I first read the recipe but the photo in the book is so gorgeous, I eventually tried it. It's delicious.

I also love the Chickpea-Noodle Soup, which isn't on your list but is easily both supermarket friendly and budget friendly if you leave out the miso (and assuming you have a fairly well-stocked spice cabinet). I've made it both with and without the miso and while it is a bit better with the miso, it's still great without it, just make sure you use broth not water. Also, soba noodles are totally necessary, whole wheat spaghetti works, too.

Continuing on the chickpeas/quinoa theme...the Chickpea-Quinoa Pilaf is probably my favorite recipe in the book. It's simple, but it's amazing. I've brought it to potluck type things several times and pretty much everyone loves it. (It's also "supermarket friendly.")
