My amazing vegan Thanksgiving dinner at Native Foods: Native Wellington (pastry thing stuffed with seitan, mushrooms, spinach, yams), baked polenta topped with squash, mashed potatoes, cranberry stuffing, green beans & gravy. I also had pumpkin pie for dessert. MMM. I wish I had 2 stomachs! Oh did I mention it was a BUFFET?

Thanksgiving Dinner today at Animal Acres farmed animal sanctuary in Acton, CA. It was catered by One World Vegetarian Cuisine. So yummy! Even better I got to spend the afternoon giving belly rubs to pigs, feeding alfalfa to cows, and celebrating Turkeys!

vegan curry with mushrooms, jasmine rice from trader joe's, seeds of change green curry sauce, and gardein tempeh. :) soooo delicious. it's almost impossible to find pre-made curry sauce without fish in it.

Slightly Spicy Veggie Chik'n Soup



Ingredients: Imagine No Chicken Broth, Trader Joe's Foursome (frozen veggies), frozen butternut squash cubes, Vegefarm Vegan Chicken Nuggets, a squirt of Bragg's, a squirt of Siriacha hot sauce, a dab of minced garlic and some other random seasoning.

Chili Cheese Cauliflower Fries - made with "Peas of Mind" Baked Cauliflower Fries, Lightlife Smart Chili and Daiya "Italian" cheese. MMMMMM. comfort food



PS you can read about the Cauliflower fries here: http://www.peasofmind.com/products/veggiewedgies.php. They also have broccoli fries, apple fries and carrot fries. I've tried Cauliflower and Broccoli so far and like the Cauliflower ones the best because they're the most potato-like (and I love me some fries).

06:04 pm - Country Fried Vegan-ness



I made a country style Sunday dinner.  Country fried seitan, mashed potatoes, biscuits, collard greens and white gravy.  It was divine.  I took my seitan recipe from here and here.

my seitan ingredients ended up looking like this:

1 1/4 cup vital wheat gluten
1-2 tablespoons nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon poultry seasoning
4-5 tablespoons chopped parsley
3/4 cup no chicken broth
squirt or two of reduced sodium soy sauce (maybe 1/8 cup?)

I simmered it in a mixture of no chicken broth, thyme, rosemary, sage and a small bit of cayenne pepper.  From there on I pretty much followed the Austin blog's directions- dredge in flour, then unsweetened soy milk/ener-g mix (left out the soy sauce/braggs and made mine really thick and batter like) and then seasoned cracker crumbs (I seasoned mine with Mrs. Dash). 

So, so, SO good.  And the leftovers make awesome chik'n biscuits.  Take that, Chik-Fil-A!!!

One successful discovery is that you can make a lovely thick sauce out of bullion and potato starch. It adds a very sturdy flavor to most things. Roswell is in favor of it.

I havent post in a while!
I had a dehydrator so i had lots of fun with raw food this week.
Feel free to add me if you want to read my foodblog =)

For breakfast, i love having this kind of parfait. I made a cream of macadamia with coconut and pears, a mango coulis with mangos and agave and then i added layers of fresh fruits and sprouted cereals ( buckwheat, lentils, millet and sunflower ) sweetened with just a little bit of agave.
