Kale
I bought the most gigantic bag of kale known to man for 1 dollar the other day and I made the soup below for in the last entry for dinner the other night. Does anyone have any recipes for kale other that lemon or garlic kale. I have a ton of recipes using garlic but I don't know what else I could use it in. It's going bad quick!!!!

Kale and garlic would both be good in lentil soup. I also just saute onions and garlic, add the kale...just before it's done, I sprinkle vinegar on it. yum.

I've made that before. It's really good! The pine nuts and raisins go so well with the kale.

Wilted kale drizzled with sesame oil is fab. Or you can add it to pasta sauce, soups, stews, casseroles, use wilted kale on pizza, or with noodles.

My mother gave me this recipe and I have yet to make it.

Sweet Potato and Kale soup

4 oz. fresh kale - cut out and discard thick veins, coarsely chop leaves.
1 Lg. onion, chopped
3 1/2 tsp Italian seasoning (oregano, basil, thyme)
2 tsp. olive oil
3 14 1/2 oz cans of veg broth (or 1 1/2 quarts)
2 15 oz cans of white kidney or cannelloni beans, drained and rinsed
1 lb. sweet potatoes, peeled and cubed
1 to 2 garlic cloves, minced (the printed recipe called for 12 cloves, and I think that's a misprint. That's too much garlic for this amount of soup--and I like garlic.)
1/2 tsp salt
1/4 tsp pepper

In a dutch oven, saute onion and italian seasoning in oil until onion is tender.
Add broth, beans, sweet potatoes, and kale. Bring to a boil, reduce heat and simmer uncovered for 10 minutes. Stir in garlic, salt, and pepper. Simmer 15 minutes or until sweet potatoes are tender.

Enjoy!

I will add chopped kale to soup, chili, or to a casserole, but I also like to eat it raw by using it in salads or wraps.

I just saute a bit of it and eat it as a side with everything.

I saw a recipe for raw kale salad not too long ago that I wanted to try. Let me see if I can dig it up.

I was going to make a winter pie with greens, mushrooms and onions and gravy. You could try something like that :)

fast and easy
stir fry with tofu
or a shepards pie type of deal
