White cake with lemon filling and lemon butter frosting.
This is the best white cake recipe that i've found so far, and so i use this recipe for other cakes not just with the lemon filling and frosting.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 1/4 cups white sugar
3 egg replacer (powdered for the most "white cake" result)
1 teaspoon vanilla extract
1 cup soy creamer (soy milk would suffice)

filling:
1 tablespoon grated lemon zest
1/2 cup fresh lemon juice
1 tablespoon cornstarch
6 tablespoons butter
3/4 cups sugar
4 egg replacer (or 1 cup applesauce)

frosting:
4 cups powdered sugar
1/4 cup butter
1/4 cup shortening
2 tablespoons fresh lemon juice
2 tablespoons soy milk

preheat oven to 350 degress F, grease and flour 2 8" round pans. In a large bowl, cream together butter and sugar until light and fluffy (about 5 minutes) beat in the egg replacer, and then vanilla. beat in flour, baking powder and salt. Beat in the milk until just incorporated.

Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a tooth pick inserted comes out clean. Cool on wire racks in pan for 10 minutes, and then invert onto wire racks to cool completely.

To make filling: in medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons of butter and 3/4 cup sugar, and bring mixture to a boil over meduim heat. Boil for one minute, stirring constantly. in a small bowl with a wire whisk beat egg replacer until smooth, whisk a small amount of the hot lemon mixture. pour the egg mixture into the saucepan, reduce heat to low, cook 5 minutes until thick (do not boil).

spread the lemon filling on the top of one of the cakes, top with remaining cake and frost.

this looks fabulouse and unique. thanks so much for posting it. what's the crumb like in the cake? fairly dense, or more light?

When used in this recipe with the lemon filling it seems more dense because of the moisture from it.

i have a white cake recipe that i adore. it's from deb on vegsource. you can leave out the chai if you want it plain. each recipe makes one 9" round, so for you two you need to double it:

Chai Cake
1 & 1/2 cups flour
3/4 cup natural sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soymilk
8 chai tea bags
2 tsp vanilla
1/4 cup oil
Ener-G Egg Substitute for 1 egg, beaten
Preheat oven to 350 F.
Grease a cake pan.
In a saucepan, put soymilk gently on low heat.
Add tea bags, and simmer 15 minutes, pressing tea bags gently to extract flavor.
Wring out tea bags into soymilk. Put this flavored soymilk in fridge to cool.
In large bowl, mix together flour, sugar, baking powder, and salt.
Combine remaining ingredients, including flavored soymilk, and add to flour mixture.
Beat for 2 minutes.
Bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.
Makes one 8" cake.
Double recipe for two 8" cakes.

just one question, do the frosting ingriedients just get creamed together?
i assumed they do, but just wanted to make sure (i'm making the frosting tomarrow, the cake and filling today)

i've actually never tried it with the applesauce, but i put that as an alternative because you're trying to get a custard like filling. The egg replacer works great and r e a l l y yummy though...if you decide to try it afterall i would love to know how it worked out!!

the lemon curd filling came out great. the texture was much different than i expected, but it worked beautifully. where is this recipe from? would you mind if i put it on my website?

if you changed it significantly to make it vegan, then i am all about posting it. it was really really really yummy. check out my recent journal entries, i am recently obsessed with finding cool frosting and cake recipes to veganzie and bake spectacular.
