Caramel Apples
I got a ton of apples recently and I saw in another post that a suggestion for them was candied apples.

Now those are good and all but one of the things I miss the most since being vegan is caramel apples. Does anyone have any idea how I could make these? I found a few recipies for caramel in the memories but i'm not sure how well it would stick to apples.

I can't find my actual recipe at the moment, but this is pretty close to the apples I make. And they are super delicious. Happy caramel apple making.

Here's a recipe I pulled from Cooking Light (roughly):
Wash and dry 8 Granny Smith apples and insert sticks in core.
1 1/2 c. brown sugar
1/3 c. water
1/3 c. molasses
2 T. margarine
1 T. white vinegar
Combine in saucepan. Bring to boil, then cover and cook for 3 minutes. Uncover and cook for 8 minutes until temp. reaches 280 degrees. Dip apples in mixture and place on waxed paper.

That seems easy enough. Have you tried this one? I find that sometimes molasses makes things taste a little bitter.

I tried it and it was good. The molasses flavor doesn't dominate because it is mostly brown sugar in the syrup. One thing I did not like was that it created kind of a hard to bite into. It was less of a chewy carmel texture and more of a hard candy coating.

I thought that candied apples and caramel apples were the same thing - what's the difference?

Candy apples have that red, sticky, candy coating on them that has a little "crunch" to it. Caramel apples are covered in caramel. :) they are both delicious!

i'm under the impression that candied apples aren't vegan of their own accord either. though I could be wrong. i think caramel apples are so much better.

Nope, I believe the red colouring used in most cases is cochineal.
