Mango Lassi

Mango lassis are delicious! I first had one at an Indian restaurant years ago, though I'd never tried to make one myself. Last night I was reading Cooking Light Magazine while making an Indian dinner and I saw this recipe, so I decided to give it a go!

I added extra mango to the mixture, because it tasted too much like yogurt and not enough like mango. I would be intriqued to try this recipe with other fruits as well, as it's basically just a delicious smoothie.

Hi there! Thanks to [info]vantid for pointing me in the direction of this place!

I've taken a peek at the other recipe offerings and have added one or two into future dinner plans (The apple-horseraddish pork roast looks amaaaazing!)
I'm more then happy to share some of my kitchen creations since I do enjoy a good mess around in the kitchen too, although I hope you won't mind if I write mine up using the metric system on occasion - it's not very difficult to do some conversions between systems!
I personally use This Website for all my conversion needs!

Anyways, to say hello to you all I thought I'd offer the delicious Lemon Slice recipe I used to make a dessert for a recent dinner party.

Here's a recipe [info]vantid got off of Foodnetwork.com for Carne Asada, and its proven to be a crowd favorite, definitely some of the best carne asada I've had. What makes this different from most carne asada is it has a distinct citrus and cilantro taste. I'm not personally a fan of too much cilantro but this has a really good balance that makes for a very "fresh" tasting beef dish that's not too heavy.

The cake is a lie...

Anyways...

Here is my recipe for chocolate covered strawberries cake. I made it for my boyfriend's birthday a few weeks back. He's not normally big on sweets at all but this cake is so tasty that he admits that he would be sad if I didn't make it for him every year on his birthday.

The cake itself is dense. The best way that I can describe it is that it tastes like "strawberry shortcake with chocolate". This is not a time to scimp on ingredients. Only use fresh srawberries. My Aunt made the mistake of using frozen berries and it ended up tasting artifical.

African Chicken Tagine with Couscous

We've tried 2 different versions of this recipe, one of them is from a cookbook called "Cover and Bake" but this one is an Emeril recipe (from foodnetwork.com) that we've slightly modified to be like the other. Basically its a hybrid between the two. Both taste very very good, and similar, so it's hard for me to decide which I like best.

Home-Made Ravioli

I'm making a TON of ravioli for a SCAdian feast that's going on this Saturday - I'm not the only person who's cooking stuff, but this is one of the bigger things that'll be in the feast...we gotta feed about 75 people ;)

This is another "period" style recipe that I got from Gode Cookery, however, my pasta dough recipe and my explaination how I make it varies a little differently from the Gode Cookery page. It's called Spinach and Mint Ravioli, but I'll also include a meat ravioli recipe that I've made as well :)

Just to warn you, this isn't a quick recipe. It takes about 2 and a half hours to make the dough and form all the ravioli from start to finish. This doesn't include the time it takes to make the mixture or to boil it.

I found this in my LJ, I thought it could posted here too. =)
I took some photos while cooking to show the recipe, and this is the result! ;) =D
There aren't so good because I didn't have enought time; I didn't want to overcook the salsa!!! XD ;)
In my previous post I took the photos while my father was cooking, in this one I had to do everything without helpers.

Anyway, the recipe's names is Ravioli "Piccanti" al Brasato e Carote con Erbe e Piselli ("Hot" Pot Roast and Carrots Ravioli with Herbs and Peas) ... uff! What a long name! :P
(It's my creation ... I invented it starting from another common recipe)

Ingredients:
- Ravioli al Brasato e Carote (Ravioli stuffed with Pot Roast and Carrots)
- Olive Oil
- Tomatoes Sauce
- Onion
- Minced Garlic
- Peas
- Salt
- Minced Basil
- Minced Laurel
- Minced Thyme
- 1Hot Pepper (very small)





... and Bon Appetit! =)

The Emperor's Fritters - A Medieval Treat!

A really yummy recipe from a cookbook of collected Medieval Recipes that we have :)

I'll include the book's version, as well as my own version (which will be behind a cut for many pictures!)

1 cup ricotta cheese
2 egg whites
2 Tablespoons of flour
2 Tablespoons of pine nuts
Oil for frying
Icing sugar or castor sugar

Beat ricotta and egg whites together until smooth. Sift flour over this batter and stir in, with pine nuts. Drop teaspoons into about 1 inch of hot oil. When browned, turn and cook on the other side. These cook very quickly; they should be crisp and golden brown on the outside, soft and light inside. Serve immediately, sprinkled with icing/castor sugar. Makes about 12 small fritters.

Risotto alla Monzese ... ;)

Risotto con la Luganega (Rice with Sausage)... or Risotto alla Monzese.
As the name says, it's a typical plate that you can find in the city of Monza.

Ingredients:
- Olive Oil
- Onion
- Sausage
- White Wine
- Salt
- Rice
- Saffron
- Chicken Bouillon Cubes (one per person)




(it could cook for 9 or 10 minutes, it depends by the rice quality)
