Supercute!

1/3 cup Earth Balance
1/2 cup brown sugar
2/3 cup dark molasses
1/2 Tbs baking soda dissolved in 2 T. water
2 cup wholewheat pastry flour, (2 1/2 if you plan to roll them out and use cutters)
1 Tbs powdered ginger
3/4 tsp each cinnamon and allspice
1/4 tsp salt
turbinado sugar for coating dough.

Preheat oven to 375°F.

Cream together the Earth Balance and the sugars in a medium bowl. Add in baking soda mixture. In a seperate bowl whisk together dry ingredients, then add those to butter and sugar mix. stir well, but do not overbeat.
(If you want to make gingerbread 'men', add 1/2 c extra flour and a little more to coat your board and rolling pin. roll to 1/3" thickness and cut, dropping them in the sugar and adding raisins for eyes if you desire)

Take spoonfulls of the dough and drop them into the sugar, coating them, before placing them onto greased or nonstick cookie sheets. (leave room! they spread!)


Bake for 8-10 minutes, or until the bottoms are slightly browned. Immediately after you remove them from the oven, cut them apart if they've merged together, remove them from the tray with a thin spatula and place on cooling racks.

ps. if you aren't vegan, you can sub butter for the Earth Balance, but it's tasty and healthier as is!
