Eat Like A Caveman

Canadian Thanksgiving...
me
[info]absinthe_dot_ca
Here in Canada, tomorrow is Thanksgiving, so I decided to post this recipe for dressing, which I've made a few times. It comes from http://paleofood.com/stuff.htm, and it's pretty darn good. I leave the mushrooms and parsley out, personally. Note that the recipe claims to be a "stuffing" but I leave it out of the bird.

Sausage and Apple Stuffing
--------------------------
10 slices bacon (6 oz), diced
2 pounds pork sausage meat
2 large onions, chopped (2 c)
8 oz. medium mushrooms, sliced (2 c) (optional(
3 medium ribs of celery, chopped (1 c)
1 tsp. dried sage leaves, crumbled
1 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
1 pound tart apples, cored and cut into 1/2" pieces (3 c)
1 cup chopped fresh parsley

Cook bacon until it just begins to brown, add crumbled sausage meat to the pan
and cook till done. Add onions, mushrooms and celery cooking until onions
and mushrooms are wilted. Stir in sage, thyme, salt and pepper, then the
apples. Remove from heat, add parsley.

Hi everyone! I've been on a very non-strict version of the Paleo diet for a very long time now, it really is amazing. I'd really like to eat 100% Paleo, all your recipes might just motivate me!

For my first contribution I'd like to share with you what I made yesterday: home-made halva! Just a warning, halva may be an acquired taste.
I used this recipe: http://www.recipezaar.com/sesame-halva-raw-vegan-gluten-free-wheat-free-dairy-free-364587
I'll try to post up some of my own culinary creations soon :)

Just wanted to plug Mark Bittman's 101 Simple Salads for The Season list from the NY Times, lots of simple and primal recipes there. I just made the carrot, cumin, cilantro, and raisin salad (#14), yum!

Do we introduce ourselves here?

Hi -

I just joined this community, but I've been following the paleo (AKA primal) diet (with breaks) since 2006. It's given me control of my blood sugar and blood pressure, and helped me lose 25 pounds.

Not only do my wife and I eat paleo, but we make sure our cat isn't eating grains as well. There are several brands of petfood that are more primal than the average, including both "Wellness" and "B.G." (Before Grains). If you have a furry friend, I would recommend that you check into what you feed him or her. After all, if you're taking care of yourself, shouldn't you take care of them as well? :-)

Kohlrabi Slaw

So I haven't gotten around to the leaves yet, but I just made this fantastic Kohlrabi Slaw from The Kitchn, and wanted to give it two exuberant thumbs up.

The only alterations I made were subtracting the sugar (the raisins were more than sweet enough!).

Eat it!

We have super cheap and hearty kohlrabi coming up in the garden, and looking at the big hearty leaves on the plant. I wondered whether they might be edible. I found this great recipe for Kohlrabi Leaves...will try it soon!

alas, no pictures today. the food went too fast!

i want to endorse two great recipes and tell you the twists i put on them.

First, I made Mark's beef and broccoli....kinda. Here are the changes I made.
1) As it is tough to find any decent beef here I used a boneless chicken breast instead.
2) I didn't marinate nuthin!
3) I used a bag of mixed frozen broccoli, cauliflower, and carrots
4) I didn't use any booze
5) I realized I was not following the recipe at all.

Secondly, I made this raw vegan flourless chocolate cake for a meeting I was going to where someone couldn't have things baked with eggs. It was a hit! Here are the changes I made to the recipe:

1) I used almond meal and walnuts mixed together (I was only use a weak hand blender that couldn't really pulverize the nuts)
2) I used raisins instead of dates and kind of eyeballed the measure, but I think it was at least 2/3 cup raisins (black and golden)
3) I (GASP!) added a tablespoon of powdered sugar (the chocolate was CRAZY bitter and i didn't know what to do)
4) I used more water than they recommended, I'd say probably at least a quarter cup. Enough to make it all stick together.
5) I just dropped a few sliced strawberries on top and called it a day, no cream or whatever she did.

Try it whatever way you like!

I thought I'd post this up here so it doesn't get lost.

I HATE cauliflower. Hate it hate it hate it. However, the recipe for Cauliflower Mashers in this post:

http://community.livejournal.com/primaleats/1997.html

was awesome. No, really. It tastes nothing like cauliflower, and that is a good thing. Must be the lemon, I'm guessing.

It has now replaced mashed potatoes (which I don't eat, but my wife does) at our house.

Here are two quick meals

The other day, I found these tiny wild salmon steaks in the freezer section of the supermarket (hard to get fresh fish here) and I cooked one in my grill pan. Chopped it up, served it over greens, with a dill mayo dressing.

I've also been noodling with recipes in the Joy of Cooking. Last week I made chicken breasts on a bed of mushrooms.Read more... )

greens coming in
[info]bottleimp
Hello, I'm new here, followed you home from Gymrats.

What I'm eating:

My greens deck boxes are coming in this week, so I thought I'd post about it. I grow dark green and red lettuces, kale and spinach in boxes on my deck, and those are a major part of my diet during the spring. Whatever else I'm eating usually goes onto a big pile of whatever I've picked that day.

Here in NC it'll only be a couple of months or less before those all bolt and go to seed, so I've found some things over the years that will grow in the heat and that I can replace the tender greens with as they bolt: purslane and plantain (AKA "weeds") garden cress, mustards, Bull's Blood beet greens, nettle (yes, you can eat nettles), huazontle, and vegetable amaranth. Most of these are old "semi-domesticated" heirloom species, dark in red/green color and high in nutrition.

some of the above (like nettles) need cooking, the others don't, or they get softened/wilted when you put hot things on them. Also many of them will self-seed and establish around your yard so that you don't have to keep planting them. Google them up.

I'd urge folks interested in good nutrition and primal eating to look into "growing your own" at least on a small scale. It opens up your options beyond what you can buy.

In a continued effort to be economical about my primal endeavours, I've been trying to salvage leftovers and food failures.

Last week's first salvage was this

Picadillo and guacamole on a bed of failed kale chips. It looks weird but tasted good.

The second salvage was this:

Savory cauliflower pancakes, made by mixing some leftover cauliflower mash (make this, it is great) with scallions and an egg. I ate it with a quick applesauce i made by warming up grated apple with a squirt of lemon and some cinnamon. Yum.

A Thought

statue of man being wrestled down by an octopus while a sweet ladyfriend looks on  (Kranj, Slovenia)

The other day, I was waiting to meet a friend in the beautiful old town center of Kranj, Slovenia. Here in Slovenia, spring has sprung, the flowers are starting to bloom, people are out and about, and gorgeous gelato is back and in abundance. As I waited for my friend and ambled around the old town, people -- nearly EVERYONE, young, old, DOGS!-- walked past me happily licking ice cream cones and I thought to myself, "Maybe I should too? Just one to start the season." Then, I remembered I still had one piece of fruit in my bag, an orange, that I had taken to work with me. I said to myself, "OK, I'll eat this orange, and then I'll go get that ice cream cone." I unpeeled the fruit and went to town on it, juice was flying everywhere (I still need to learn how to eat those things properly). Oddly enough by the time I'd eaten the last bite, the thought of ice cream was a distant memory. It wasn't even that the orange was so incredible. It was just satiating. As I am only about a month into my primal journey, it was an important lesson to me not to fall into sugary empty-calorie'd temptation just for the sake of it.

I can already sense my taste buds changing, and overly-saccharine sweet things are losing their appeal to me. I am reconnecting with the natural taste and textures of foods -- the crunch of an apple, the fragrant and sweet mushiness of a good kiwi. While I'm sure I'll have an ice cream or two as the summer months weave through, I am absolutely certain I'll be having far more apples, kiwis, pineapples, berries, oranges, and keeping them within close reach.

Coconut Curry Beef Stew
(btw, that's also bits of egg on there. i ran out of the house that morning without eating my breakfast, so i had it for dinner. waste not, want not.)

The other day I wanted to make the Beef and Potato stew from Caveman Eats (sans potato, of course). I even had the saffron and everything, but when I went to the store to get the beef I remembered how much I liked the coconut curry butternut squash from the other day and I still had about a fourth of the squash left. So I decided to make an experimental coconut curry beef and vegetable stew. My omnivore and I ate it with coconut cauliflower "rice" (recipe here, I threw in some coconut flakes) and really enjoyed it. It was even better as leftovers the next day!

Here is the recipe.

Breakfast Salad

I DO NOT make a habit of eating bacon or any preserved meats since the selection we have here is generally of very low grade, but I bought a package of bacon as a little treat the other day and today I decided to finish it up here with this "breakfast salad". It is two over-medium eggs atop mache and chicory greens (from our garden)drizzled with white balasamic and springled with bacon and a little bit of nori flakes. It was good eating!

This is all on Mark's Daily Apple page, but (though I love him) I find Mark to be a little too wordy sometimes.

Here's the simple "caveman" version:

1. Eat lots of animals, insects and plants.

2. Move around a lot at a slow pace.

3. Lift heavy things.

4. Run really fast every once in a while.
