What do people get out of pony play? Ask various people who are into it and you're liable to get a number of different answers, just like the FAQ page states.
On the "Master," or "Trainer" side, people may enjoy the ability to treat someone more like an animal, train them, watch how they perform, etc.
For the "Ponies," they can be most anything - a show pony, cart-pulling pony, even a riding pony. They may wear very little tack or more elaborate (and expensive) outfits depending on their taste, and they may enjoy performing, being taken care of by someone else, and being able to forget about their human side for a while. Some might just like the feel of being groomed! That's just scratching the surface.
Also worth noting is while the FAQ contains a lot of good and useful information, it should not be considered an end-all, be-all of pony play info. Following this community should prove this.
