Chicken Kiev with roasted parmesan potatoes and homemade ice cream sandwich for dessert (the latter courtesy of the boyfriend. :) Yum yum.

Orange & Thyme Chicken with Crispy Parmesan Potatoes

Now truffles are quite subtle in taste, a tomato based sauce would have totally killed the flavour of the pasta. So I went in an opposite direction. I made a nice zesty brown butter sauce.
The pasta was ready in 40 minutes and man did it go down a treat. Light and refreshing, totally satisfying. Dinner ended up being quite late cos we fussed around with the dessert a bit….so it was nice to have a light pasta. I did get pair it with some nice roasted aspargus and pan seared lamb chops. The richness of the herbed lamb complimented the light pasta. Great contrast.
Economical if you use normal pasta and it would still taste great I am sure. If you have some leftover roast…I think this would be a great leftover dish too!

Strawberry Banana Muffins

Cordon Rose Banana Cupcakes with Sour Cream Ganache
I was so excited to get my copy of the Cake Bible i had to bake something from it right away. And what better to start off than with banana cupcakes with chocolate and sour cream frosting.
I've used sour cream in baked goods several times but never in frosting so i was curious to find out how it would go in a frosting especially paired with chocolate.
The result was the lightest, fluffiest banana cupcakes i've ever had with a dark, thick delicious chocolate frosting with just a hint of tangyness.

( ButterFest '08 follows... )


This was a new way for me to serve scallops and we enjoyed it very much. I highly suggest using the Pernod, as the very first time I made this, I left it out and it wasn't nearly as tasty. I'd also suggest getting the jumbo sea scallops, if you can find them. The presentation is so much nicer in my opinion. Unfortunately, once again, my locale betrays me and the smaller sea scallops were all I could get my hands on. And please do make the spinach, cooking it in the pan drippings was simply amazing!
