My bf made me the best vegan gluten free cookies ever! He's vegan too, but picky about gluten free stuff, especially baked goods... but he loved these!

He used this recipe

with these modifications:

He substituted 1/2 cup buckwheat flour for the brown rice flour, but he won't do that next time... He'll just use additional white rice flour or sorghum flour. He also used cornstarch instead of arrowroot, but they're very interchangeable. He probably also used a little less chocolate chips than were called for.

A veg friend, [info]bkerr, wrote about GroupRecipes in his blog.

Keyword "vegan" produced 26 recipes, a few with gorgeous technicolor photos.

The site looks interesting! So I thought I'd share.

In other news, I recently acquired white chocolate chips from Pangea, now to find the perfect white chocolate macadamia nut vegan cookie recipe. Drooooooool!

Moroccan Chickpea Stew

I watch a lot of cooking shows pretty regularly, even though the majority of what gets cooked on them isn't vegetarian, let alone vegan. However, this past weekend I saw a recipe that turned out to be both vegan and really delicious on on the Food Network's Dave Lieberman show (oddly enough).

simple soup

boil 4 cups of water
dissolve one bullion cube (the kind with salt) in the water
add a handful of rotini, or other pasta
boil for 5 minutes
turn heat half way down and add carrots and green onions and cook on half heat for 5 to 10 minutes
add spinach and/or mushrooms until spinach shrivels (1-2 minutes)
you can also add cubed tofu
serve with bread

tempeh bacon





1 pkg tempeh
1/4 cup soy sauce
1/4-1/2 t liquid smoke
2 T maple syrup
1/4 cup water

marinate tempeh from one hour to overnight.
fry over med/low to med heat in olive oil for that bacon crispiness for 5 minutes per side... or in any other healthy manner instead (ie- bake).

Vegan Cheese Top 5

A quick primer about vegan commercial "cheese" options.

While many vegans do not see the point in replicating tastes from their omnivore days, others yearn for the flavors and textures of their youth but in a compassionate form. When it comes to cheese, vegans have long gone without, as the majority of soy cheese products contain at least one animal ingredient: casein.

However, there have recently been a number of vegan cheese products that have become available to the consumer. Since I've tried them all, I decided to come up with a Top 5 of sorts along with my thoughts about each.... )

i made another batch of [different] muffins, but i think i was too generous with wet ingredients. i'll let them "hang out" in the fridge for a while so that they dry up a bit, hopefully they won't taste too bad. they shouldn't though, there's chocolate in them!

me and my muffins, i swear. i really need to start baking other stuff. any suggestions?

I guess they're not as healthy as the usual ones, since they are made with unbleached all purpose flour rather than whole wheat, but trust me, they ARE good. chaz was all over them too.

Orange and Chocolate Muffins

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
the equivalent of one egg [i used apple sauce]
3/4 cup orange juice
1/3 cup vegetable oil
1 cup choc chips OR 1 cup blueberries [chaz wants blueberries instead of choc. chips next time. is he demanding or what?]

mix the dry stuff, mix the wet stuff in another bowl, mix the two together, don't OVERmix, pour into jumbo muffin tin. makes six muffins. [if you want smaller muffins, bake at the same temp. but only for 20 minutes]

Bake at 400° for 30 minutes.

I've been feeling too lazy to cook much, lately.
and it turns out [info]chazriel was right, the chocolate cake was pretty much disgusting. ok, maybe not disgusting, but too bitter. I ended up tossing it.

you guys need to inspire me with your awesome recipes!

i need to find a rice/soy/almond milk that is both unsweetened AND enriched in calcium.
has anyone seen that?

EDIT: maybe the silk unsweetened drink is both. i need to check it out.
EDIT2: yes, silk unsweetened soymilk IS calcium-enriched.

i feel bad for constantly updating this journal with the stuff that i make, but damn!

anyway, decided to freeze the rest of the chocolate dream pie so that it doesn't break when i serve it.
that way, i cut it when it's still frozen, put it in plates and let it thaw until it's ready to eat.

here's the recipe for the "whipped cream" i put on top of the pie.

1 1/2 cup soft tofu
2 tsp cornstarch
2 tsp vanilla extract
2-4 tbsp dry sweetener

put in blender, blend together well, chill in fridge for one hour.
