Don't just make use of those left over broccoli stalks, make 'em DELICIOUS! You will love this broccoli salad recipe.

Use a nice organic raisin please. It will make all the difference in the world when it comes to taste. I use Newman's Own brand, which I have found to be the best.

nerdguy2.jpgHey peeps, A message to those who are into Second Life (the virtual world, secondlife.com). I have just opened a SL avatar clothing shop called Adjunct. Right now I have mostly geek chic items like suspender pants, bow ties and dress shirts. More stuff coming soon. Also, only guy stuff, sorry ladies. But as things progress who knows, I might start doing girly clothes. Check out the website which has a teleport link that will take you in-world to my store.

I'm hoping that the SL clothing business will fund my future plans to build a virtual vegan "ride" in SL. This "ride" will take you on a journey and hopefully by the end of it turn those who might be considering becoming vegan into converts. Working title for this project is "The Brain Washer" tehee. So if you want this project to come into fruition, tell all your Second Life friends/fans to shop at Adjunct!

This recipe was inspired by the manicotti stuffed with cheese and spinach. The difference is this dish is quicker and less cumbersone and of course vegan. Any of my readers fans of Susan Powter? If you are, and even if you may not think you are, you must listen to her new online radio show, Susan Powter's Radio Show. She tells it like it is, completely unafraid, unfettered with advertisers. Amazing! This show is a revolution. And after you listen to her show, head over to Eric Marcus' VegTalk Radio. I get fired up every time I listen to these shows. So inspiring. Not my favorites, but there's also Vegan Radio , Go Vegan Radio and Vegan Freak Radio.

With this recipe I wanted to not only make a thick and creamy hot cocoa I also wanted a thick frothy foam to form on top, mimicking melted marshmallows. This recipe accomplishes that. You will see a frothy foam form on top as you are mixing it. Even more so than in the photo. I had to take some of the foam out so that the cocoa would show through. GO TO RECIPE >

I recommend that you use Thai Kitchen's Pure Coconut Milk. It has no chemical additives or preservatives like some other brands.

This is the last recipe I'll be posting until 2009, although I might post another blog entry. I will not be returning with recipes until the second week of January. Next year should be a good year for MVC. I have plans to start a slickly produced digital vegan magazine. It's still in the planning stages but I've recently purchased InDesign and am gearing up to publish hopefully in spring of next year. I'm not sure how many times I will publish a year. At most 3 times a year. It will probably be more like Spring/Summer and Fall/Winter, so twice a year. If I get inspired I could wind up doing an extra one in the middle.

The perfect Thanksgiving stuffing for stuffing baby pumpkins, squash or peppers.

The one thing I hate about stuffing is all the bread used. I rarely eat bread because most bread has high fructose corn syrup in it. Sandwich bread is the devil in my book. So to chop it into cubes and make it the highlight of a dish, eww. I'm not going to eat that. So with this recipe the thing that I had in mind was; how do I improve on that? I went through everything, even making my own bread. That was ruled out because it's too time consuming. I finally found some organic salad croutons with no high fructose corn syrup from Fresh Gourmet that didn't seem SO bad. So I highly recommend these croutons for this recipe, it makes it. I've also bulked up the recipe with wild rice and dried cranberries which gives this stuffing real zing. There was a trade off however, the croutons have more fat.

This recipe makes enough to stuff 2 Gold Nugget Squash. GO TO RECIPE >

Excuse me while I take a break from blogging about vegan recipes and talk about Second Life...

I'm hoping to be back with another recipe in a few days. I've been busy the past 2 weeks with Halloween parties and work. I've also just recently discovered Second Life. I'm completely fascinated by it and have immersed myself in the whole SL culture the past few days. I'm finding it difficult to pull myself out of it long enough to focus on vegan recipes. I have an addictive personality and when I find something I love I become obsessed. I really can't afford to let my first life go, so I'm hoping I can snap out of it soon. lol One thing that I was curious about was vegans in Second Life. There are 2 vegan groups with a little over 100 people in them. But I was disappointed to find there were no real landmarks in SL for vegans to meet up. Our presence there is pretty small. I want to create some sort of attraction in SL on the grid for vegans. What that will look like or be is still in the works. I have several ideas running around in my head. A couple ideas... A vegan diner. Something like "My Vegan Diner". Also have a cake and sweets shop where you can buy virtual vegan cakes to gift to your In-World friends. The virtual cake would come with an actual recipe you can make in RL (real life), as would the virtual food in the diner. A virtual farmer's market. A virtual vegan 101 cooking school for newbie vegans. A My Vegan Cookbook souvenir shop. We could do some things to draw attention to our favorite causes like animal rights, health and the environment. Anyone have some other ideas? I'd love to hear them. I think for this to work we are going to need the help of other vegan websites to get the word out. If you have a vegan website and want to have your presence there contact me (myvegancookbook@gmail.com) to discuss your ideas. Are any of you there? Please friend me. Be you 1 or 100, geek or prep, black or white, gay or straight, christian, jew or godless...just be vegan or vegan curious, you get the idea. My username in SL is "myvegancookbook Bolissima". And I look like this... a cross between what I look like in RL and what I WISH I look like. lol If only I had that hairline.

The problems I'm finding with Second Life is that it's difficult to connect with others. I'm socially awkward and it makes sense that I would be the same way in SL as I am in RL. So I take offense to those who say SL is for people who are socially awkward in RL. There is a real discrimination when it comes to "newbies". That in itself makes things even harder when you first arrive. Which I really don't understand. Maybe as I stick around longer I'll feel the same way. But everyone has to start. I'm also finding that there is a steep learning curve. No surprise that only 1 out of 10 people who join SL stick around. After you've run around to all of the major hot spots there, peeked into a few houses and tried to connect with some cool peeps (just as in RL, there aren't any lol), excitement can wan. In all honesty, right now, SL is a really cool -- adult dollhouse. Which hey, I admit it, I like to play with dolls. : ) But I see great potential in this new world. SL is fairly new. New things are always intimidating and scary. But I'm excited by the new and I can't wait to see how vegans make their mark on this new land.

Speaking of new. I'm excited to see who our new president will be! Happy voting day to my US readers!

It's been 20 something years but I still remember eating those frozen Salisbury Steaks as a kid before I became vegetarian. Besides the artery clogging cholesterol they had a 4 digit sodium listing. Just like my barbecue sandwich I use hearts of palm to give this Brunswick stew recipe it's meaty stringy texture. Nothing says fall like a brimming bowl of Brunswick stew. This recipe uses fire roasted tomatoes which I started using after I read Susan's (of FatFreeVegan.com) tomato soup recipe entry. Props go out to her for turning me on to those. I sometimes have trouble getting them at the grocery store I shop at and solved that by ordering bulk at amazon.com. They really do add a lot of depth to chili, soups and stews. GO TO RECIPE >

I wanted to remind everyone how important it is to follow the directions of a recipe exactly. I was making my own pizza cheeze the other day and I didn't follow my own recipe. I didn't measure, added some new ingredients (feeling cocky and creative) and it didn't turn out. I'm guilty of doing this with other people's recipes as well. What is the point of following a recipe if you are going to add your own ideas to it and not even bother to accurately measure? Having people blog about making my recipes is both exciting and sometimes quite difficult, as I can be a little bit of a control freak. It pains me to read someone take out my brownie cookies in mid baking. And I'm powerless to stop them from photographing the results. lol But who am I to tell someone they can't eat cookies partially baked?

I got an amazing fake Salisbury Steak recipe coming up at the start of next week. If you loved my lentil loaf recipe, you're going to love this one.

This is the perfect chocolate cake recipe. If you are like me, pretty new to vegan baking and have been searching for a perfect chocolate cake, but haven't found it, this is the one. This recipe isn't incredibly original. It's a tweaked version of a recipe I got from a vegan cooking DVD, which they said was a depression era cake. One of the things I adjusted was replacing the vinegar with lemon juice, it does the exact same thing but doesn't leave a bitter aftertaste. I have never liked vegan cake recipes that use vinegar because I can always taste it. I mean, you would have to right? Have you ever tried to drink straight vinegar? It's beyond repulsive.
