Simple Salsa Tilapia
Before we get into the recipe, there's a couple of things to note. First, my husband is one of those natural born chefs that just instinctively seems to know what works together. He doesn't usually measure things out -- it's all by taste for him. That means the measurements given in the recipe are guestimations. More than likely you'll need to play with it a bit to get the flavor you like. Second, this picture isn't the best example of the dish (I REALLY wish I had taken a pic of the first one; it was something you would have seen in a high scale restaurant): the amount of salsa he used this time around was best suited for 4 servings rather than the 2 he made for us last night, so the salsa kind of buries the fish here. Still tasted great, but definitely stronger with the salsa than the first time he made it.
Simple Salsa Tilapia4 pcs tilapia (between 1 - 1 1/2 pounds total)
1/2 c. diced tomato
3/4 c. chopped onion
1/2 c. finely chopped cilantro
1 1/2 tsp lime juice (or less -- to taste)
2 tsp olive oil
extra olive oil for cooking
Combine tomato, onion, cilantro, lime juice, and 2 tsp olive oil. Place tilapia in a bowl and pour salsa marinade over it, combine so fish is covered, then marinate for an hour or more. Heat small amount of oil in a pan. Remove marinade from tilapia and place fish in pan. Lightly brown over medium heat. Lower heat and turn fish to other side. Add marinade and cook about 5 - 10 minutes (do not overcook or fish will come out dry and salsa will become mushy). Serve fish with salsa marinade as a garnish.
