Maki Side Dish #32 ~ Comic Gumbo

Manga magazines are not selling as well as they used to. Peeps can get their manga and novel mags online or on their cells, so printed phonebooks are no longer convenient.

New publisher Digima is trying to give people cheap... err actually free manga in exchange for convenience. And they are getting attention. Their titles can now be read for free online (like Flex Comix... actually both are on the Yahoo Comics site). And more and more established artists are joining the fold.

What I did find interesting are the advertisers. I don't usually see American skate board companies and Korean soju makers in manga magazines but they are in Gumbo. It really is a mix of different tastes.

Oh and please don't mind the coughing. I just got off a plane when I recorded this.

Salaryman Trader Arashi... Arashi has got a job but he is still the gambler- I mean risk taker as he has always been. One chapter into the series and he has already cost his company around $200,000!! That is hardcore gambling even for the most experienced risk takers!

G-Cup sounds like a manga Icarus should release. But this story is a baseball story that is set in the US. And the characters in this manga are so big and juiced up they hit homeruns on their backswings!! These guys make the characters in Fist of the North Star look small. And I don't think Kenshiro could hit a double down the line without swinging?

Ever wonder what OL and salaryman do with their free time? In Shinako no Oshigoto we are told that they basically talk about work and drink hard. Sometimes they worry about looking fat in their uniforms or they freak out about their growing nose hair! Can the idea of "too much information" apply to manga? I hope not!

Curry recipe (41:41)

Kai Phenan

1 kg chicken thigh
1 tsp salt
1 tsp pepper
1 clove garlic
1 can coconut milk
2 tbsp cumin
3 raw hot peppers
1 tbsp soy sauce
1/2 cup crushed peanuts
1 tbsp corriander
1 tbsp lemon juice
cilantro
shrimp paste

Salt, pepper and garlic the chicken.
Add the coconut milk only to a large pan (save the solids from the can for later).
Heat up the coconut milk on low heat and add the spiced chicken. Cook for 30 min on low heat. Once done remove the chicken from the coconut milk.
In a frying pan add the cumin, corriander, peppers and shrimp paste until the spices get aromatic.
Add the items to a mortar and grind with a pestle until mixture forms a smooth paste. Add salt and soy souse to paste and add this and the crushed peanuts to the coconut milk and cook for 3 minutes or so.
Add the rest of the coconut milk stuff and cook for 5 minutes or so before adding the chicken back to the pan. Cook everything for 15 min on simmer.
Then add the lemon juice and cilantro when serving.

Crab Curry Recipe

a ingredients
1kg crab in shell
5 stalks scallions
1 egg raw
3 cloves garlic
3 tbls salad oil
2 stalks cilnatro

B ingredients
2 tbls sugar
2 tbls curry powder
1 tlbs vietnamese hot sauce (or more if you like spicy stuff)
1 white pepper
sake
water

Prep
Chop the crab into edible sizes. Shop the scallions into thirds - the roots and white part/the middle thick part of the green end and the tips. They should be even lengths. Then grind up the white part and grind the garlic. Beat the raw egg up and separate into two halves. Dip the crab pieces in one half of the raw egg to coat.
Prep the "b ingredients" by mixing the water, sugar and sake together.

Cooking
Using the oil in a wok cook the ground garlic/scallion and once the smell really comes out add the crab. If the wok is hot the crab will cook rather quickly. You can tell when it is done because the shell begins to change color.

When the crab changes color add all the B ingredients and lower the heat to medium and slowly add the water/sake mixture. Then add the pepper, curry and hot sauce. That should coat all of the crab and create a sauce. Then add the cilantro, scallions and the rest of the egg and cook until the egg is done (you should have little bits of scambled egg).

Serve! I suggest shouchuu but Jack would have this with a tall beer.

Mutton Curry (51:37)

Mutton Curry Recipe

Group A (mutton)
800g muuyom thigh
1/2 cup yogurt
1 nub of minced ginger
chili powder
salt

B (curry)
1 cup salad oil
1tbsp curry
1 onion
1-2 medium tomatoes
2 tbsp ground ginger
2 tbsp ground garlic
1 tsp gran masala
salt
500g soup stock

Directions

Put the mutton in a bowl and mix in the a ingredients. This will be a type of marinade to make the mutton easier to eat and get the flavor adjusted. Let sit for an hour covered and chill in the fridge.

Later, in a frying pan heat up 1/2 cup of the oil. When the oil is warm add the A Items from the chilled bowl slowly into the pan (if the oil is too hot be careful of oil splatter). Pan fry the meat by slowly turn up the temp to high heat until meat is cooked through. Add the contents including oil and drippings into a pot heat it on low heat for 30 min with the lead on.

In another pot heat up the rest of the oil. Grind up that onion and add it to the warm oil. You will be making the curry now. Cook the onion until it is golden (yup again). When done add the ground ginger, the ground garlic the curry in that order. Then when the curry is mixed into the onion mix then slowly add 3/4 of the soup stock. Consistently stir the curry to make sure the ground items lift off the bottom of the pot. Cook for 15~20 always checking on the onions.

Slice up the tomatoes into 8ths. Add to the curry. Then add the contents of the other pot and get the pot to simmer. And then add the remaining stock and cook for 30 more min. Before serving add the gran masala (and maybe some corriander) and serve with rice.

Bite Sized Curry Bread Recipe

1 tspn salad oil
1/2 egg
1 tblspn milk
1/2 tspn salt
1/2 tspn sugar

previously made curry
150g flour
1g baking powder
1 tblspn plain yogurt
1 bag bread crumbs
frying oil

Directions
Mix the initial ingredients together - salad oil, salt, milk, egg, sugar - in a bowl.

In another bowl pour in the flour and once that is done try to create a bowl within the flour for items to be poured into. Into that flour crater pour the contents from the first bowl and then the baking powder. Throughly mix together until you get a doughy consistnecy. Cover the bowl up with a towel and let sit in a cool place for at least an hour.

Go back to the dough and pull out enough to create balls that are no larger than 3cm wide. You should get around 12 balls. Take each ball and flatten with a rolling pin until they are no larger than 10cm wide circle. Pick up each circle and fold in half. Then fold in half again length-wise to create a little cup. With water seal the edges of the dough cup. And pull the cup open. Fill 2/3rds of the cup with the premade curry. And then close the cup. Repeat with the other cups.

Brush the cups with the yogurt. And then cover cups in bread crumbs. Place the crumbed cup on a baking pan and heat in a toaster oven for 10 min to cook the insides. Then heat up the frying oil in a pan to 170F. Fry the cooked cups until golden brown. Let cool and serve!

A curry filled snack when you have leftover curry around.

Whitefish in Coconut Milk Curry

3 hot chillies
1 tbls cummin
2 tbls corriander
1 tsp pepper corn

1tsp tumeric powder
3/4 can coconut milk
1 cup water
2 cloves garlic
salt
1 tomato
10 mild green chillies
400g whitefish

Directions
Grind the intial items with pestel and mortar until it becomes a fine powder.

In a food processor as the garlic, coconut milk and water and mix until it gets a light consistency. Then tranfer into a pan and cook until simmering. Add the tumeric and the ground spices. Then add the tomato cut into 8ths and some salt. Let reduce a bit (10min) and then add the fish. Cook until the meat is fully done, about 5 on each side (until it becomes solid white all the way through. You might want to cook skin side up). And serve!

Serve with high grad white rice and some water cause this one might be spicy. A light refreshing Thai-influenced curry that is easy to make on the run.

Since this one went a little long GarageBan cut out before the end, so here is the recipe for you curry addicts!

Daikon Curry

400g daikon
1 lotus root
1 carrot
2 small potatoes
100g broad bean
4tbls butter
1 yellow onion
1 nob ginger
1 clove garlic
50g apple jam
60g corn starch
30g curry podwer
2 cups broth
1 tbls tomato puree
2 cups dashi
salt to taste

Directions
Finely mince the onion, garlic and ginger and cook in a warm frying pan with 2tbs of butter. Cook until they begin to caramelize.

Then add the starch and curry and lower to low heat. Mix that in well and then add the broth to the pan. Stir a bit and let simmer for 30 minutes on low low heat.

Add the jam, tomato puree and salt and continue to cook for around 30 more minutes.

In a pot heat up the rest of the butter and once that is melted add the big veggies - daikon, carrots, lotus root and beans. Add the dashi to the pot and bring to a good simmer. When the daikon is soft (test it out as it gets soft faster than the carrots) lower the heat and then add in the curry from the frying pan. Then add the potatoes and cook until they are soft and viola.

Serve with high grad white rice and some mugi-cha as your drink for a very japanese curry based meal that is filling and pretty healthy. And vegetarian... Hana is no Vegan!

Just a heads up to all you Maki faithful out there, we are going to go ahead postpone this week's recording until next week. Since May is right around the corner, we thought it would be best to kick off the new month with a new Maki that includes our May Pull List.

Also, Ed is preparing for a new monthly segment that should be a lot of fun. He's training his yanki voice deep in the heart of some Amazonian jungle while fighting giant apes, so I'm sure he'll be ready! What, a hint?
