setting default mail app WITHOUT launching mail
Quick question:

Is there a way to set the default email program WITHOUT having to launch Mail.app? Essentially, is there a way to access the Mail preference file and edit the preference file directly?

Even though the setting is set in Mail.app, it belongs to Launch Services, the systemwide component responsible for making applications run when various events occur (like clicking on them in the Dock, or clicking on a link).

While LS isn't the easiest thing to edit manually, you can configure all of its bindings programmatically through an API, or in userland, with RCDefaultApp

Well, you can probably do it from the console, using 'write defaults', but other than that, no.
