кулинарные заблуждения
Народ, никто не подскажет парочку распространенных кулинарных заблуждений, типа того, что мясо для шашлыка должно обязательно вымачиваться в уксусе.
Помогите плиз, оччень надо!

баранина - вонючее мясо и готовить его очень сложно.
А, помню, как чуть не подрался с девушкой, которая была уверена, что если бросить яйца в кипяток, они полопаются. Когда не лопнуло ни одно из 50, она была крайне удивлена :)

Ошибочка. Все зависит от сорта. Есть горькие, которые без предварительной посолки не того.

Солить говядину перед жаркой. А еще лучше посолить и оставить, чтоб впиталось.

О том, что при варке пшенной каши, например, первую воду надо сливать, потому что пшено горчит.
Думаю, это было вызвано тем, что в Советском Союзе продавались стратегические запасы пшена, вылежавшиеся до горечи.

Вы меня извините, но я слыхала, что люди промывают рис перед варкой. Я не понимаю зачем они это делают. И никогда его не мою. Кто мне скажет, что я делаю неправильно?

А вы помойте разок, да посмотрите, сколько будет грязи. За исключением сортов риса для ризотто(этот почему-то чистый) рис грязен до безобразия. А еще в некоторых случаях его надо замачивать в хорошей воде ДО мытья.

а вот еще слышала - говорят, что в макароны после варки надо кинуть кусок масла или залить растительного, чтобы не слипались. Так вот, лучше масла кинуть или залить в кипящую воду, пока те варятся.

Раствор соли действительно кипит при более _низкой_ температуре, т.е. быстрее.
Это никакое не заблуждение. Именно поэтому яйца в соленой воде лопаются реже.

И что тут такого крамольного?
Обжаривание томатной пасты даёт небольшую карамелизацию углеводов, в ней содержащихся, что иногда значительно меняет вкус первого блюда, куда она добавляется. Для этой самой карамелизации обжаривают, кстати и лук. Вам это не кажется заблуждением?
Другое дело, что в нынешних условиях томатная паста бывает такой, что лучше пять раз подумать, прежде чем её куда-то пихать. Но если там в составе одни помидоры - обжаривание перед добавлением в рассольник - абсолютно логичное действие.

а разве нет? я всегда наивно считала, что закрывание крышкой предотвращает отдачу тепла кухне и тем самым сохраняет его в кастрюле и нагревается быстрее.

Могу еще рассказать, может не массовое заблуждение, но делать не стоит:

Шашлык из размороженого мяса делать не стоит, будет сухой как пить дать, ничем не исправишь.

Еще заблуждение - лучший шашлык из шеи свиньи.

Базилик, как-то я вычитала, хранить в стакане с водой при комнатной температуре. Фигня, сдох быстрее, чем в холодильнике. Лучше вообще не хранить, наверное.

А как насчет мочить нож в воде, когда режишь лук. Помогает?

Холодец (студень) будет прозрачным, если варить без крышки.
Яйца всмятку необходимо варить 3-4 минуты (Гугль, Яндекс).
Фасоль сварится быстрее, если в воду добавить соды.

Ну и не совсем кулинарное:

Купленные яйца надо бегом-бегом класть в холодильник. (Почему же они тогда магазине никогда не лежат в холодильнике?). В сырых яйцах всегда сальмонелла. Но она таинственно исчезает если яйца взбить с сахаром (например, в тирамису). Чтобы вскипятить воду для чая, ни в коем случае нельзя заливать в чайник горячую воду из-под крана. Только холодную. Шампиньоны, цветную капусту и брокколи сырыми не едят. На оливковом масле нельзя жарить. Сыр с плесенью это антибиотик.
