Lord of the Rings
I was browsing through the memories and was actually shocked that there wasn't a post for Lord of the Rings. Granted, the last one only came out five years ago, but it was essentially filmed nearly a decade ago. Hard to believe, I know. So without further ado...

Let's start with the basics.
The Fellowship
Elijah Wood (Frodo Baggins)

Since Return of the King, Elijah has been in Eternal Sunshine of the Spotless Mind, Green Street Hooligans, Sin City, Paris je t'aime, and Happy Feet, just to name a few.
Sean Astin (Samwise Gamgee)

Since RotK, Sean has most notably been in 50 First Dates, Click, and a bunch of TV, including 24, Monk, My Name is Earl, and Law & Order. So he's not doing too bad for himself.
Viggo Mortensen (Aragorn)

Viggo has gone on to star in Hidalgo, A History of Violence, and Eastern Promises, in which he was nominated for an Academy Award.
Sean Bean (Boromir)

Sean has gone on to be in Troy, National Treasure, The Island, North Country, Flightplan, Silent Hill, and The Hitcher.
Orlando Bloom (Legolas Greenleaf)

Orlando has starred in a slew of movies since LotR, including Troy, Kingdom of Heaven, Elizabethtown, and the ridiculously popular Pirates of the Caribbean trilogy.
Ian McKellan (Gandalf)

As far as I know, he's done a lot of stage since LotR, as usual. He's also been in The Da Vinci Code, X-Men: The Last Stand, and the narrator in Stardust.
Dominic Monaghan (Merry)

His most notable role was as Charlie Pace in the TV show LOST.
Billy Boyd (Pippin)

Billy Boyd has since been in Seed of Chucky, On a Clear Day, The Flying Scotsman, Save Angel Hope, and Stone of Destiny. He's also become a daddy too :) He also plays with his band Beecake.
John Rhys-Davies (Gimli)

Photo from 2005, the most recent I could find. He's been in a slew of stuff since, including The Princess Diaries 2, Shadows in the Sun, and The King Maker.

Supporting Players
Liv Tyler (Arwen)

Liv has since starred in Jersey Girl, Lonesome Jim, Reign Over Me, The Strangers, and The Incredible Hulk. She also became mommy to a beautiful little boy named Milo!
Miranda Otto (Eowyn)

Since Return of the King, Miranda has since been in Flight of the Pheonix, War of the Worlds, and the TV show Cashmere Mafia. I believe she has also become a mom, too.
Cate Blanchett (Galadriel)

Cate has continued on her wave of amazing success with roles in The Aviator, Babel, Notes on a Scandell, I'm Not There, Elizabeth: The Golden Age, and the latest Indiana Jones. She has been nominated for five Oscars since and won for Best Supporting Actress in The Aviator.
Andy Serkis (Gollum)

Obviously not a picture of Andy, lol... anyway, he's since been in 13 Going on 30, King Kong (Kong, motion capture and whatnot), The Prestige, Flushed Away (voice of Spike), and Sugarhouse.
Ian Holm (Bilbo Baggins)

Ian has since been in Garden State, The Day After Tomorrow, The Aviator, Strangers with Candy, and Ratatouille (the voice of Skinner).
Christopher Lee (Saruman)

Christopher has since starred in Star Wars Episode III Revenge of the Sith, Charlie and the Chocolate Factory, Corpse Bride, and The Golden Compass. I heard he was pissed off that his role was basically cut from The Return of the King theatrical edition, but who knows.
Aaaaand finally...
Peter Jackson (Director)

Since the trilogy, Peter went on to produce/direct/write King Kong. He is set to produce Tintin and executive produce The Hobbit and The Hobbit 2, both of which are slated for 2011 and 12.
