knife-care
I just got a lovely starter set of Henckels for Christmas, and since they're my first extra nice kitchen item (I'm still in school), I want to be sure that I take good care of them. I've read the little insert, and I know not to put them in the dishwasher or toss them in the utensil drawer... what else do you do to take care of your knives? Also, they came with a pretty little presentation box, a little too pretty to just toss around on my counter, so where on earth do I find an *empty* knife block? would a place like linens n things or target have them for an affordable price? thanks :D

bed bath and beyond and places like that do indeed have empty blocks. Also, kitchen stores like sur la table. :)

Any good cooking store will sell these plastic sheath type things that your knife blades will fit into. I keep all my good knives in those, and then lay them on their side in a drawer. My MIL's Cosco knife salesperson (cosco? maybe that's not right) says you should never store them blade down in a block, because they'll get dull, but I really have no clue if that's true.

Knife blocks aren't the best way to store knives- the wood will dull them over time, plus it's impossible to clean the slots.

Some sort of rack, either for the drawer or to attach to a wall works best. I have a plastic one with slots (but they're in a sheet,not a block), but will be replacing it soon with a magnetic one.

I like the magnetized strips to stick them to. Then you can see which knife would be best for your purpose and never have to wrry about dulling them. I think they'd be easy to make too if you didn't want to spend money on them.
