Flatbread recipes, anyone? I'm looking for something to replace pita bread. =)

Pita Bread Chicken Pizza

[info]icicle mentioned some pita bread pizza she made, and it sounded fun, so i asked for the recipe. then i sorta changed/expanded on it, using ingredients i already had.

her recipe is a bit healthier:

naked chik'n cutlets, microwaved about 30 seconds
brush both sides with olive oil, sprinkle poultry seasoning and italian seasoning
put in oven for about 5 minutes

high fiber pita bread, spread with one teaspoon olive oil
sprinkle Italian seasoned bread crumbs around the edges of the "crust"
chopped garlic, spread in center
grated parmesan sprinkled over it

1/4 cup part skim shredded mozzarella cheese (she said she doubles this because she loves cheese)
sprinkle pizza seasoning on top
cut chicken (out of oven by this point) into strips or cubes and place on top
put back in oven for 3-5 minutes (long enough for cheese to bubble)

they taste yum to me. and this could totally be tailored to make regular pizzas, with red sauce and pepperoni or whatever. not sure how well they'll reheat, but i'm taking one for lunch tomorrow so i'll find out.

Indian-Spiced Shmear

Happy Hangover Sunday! (I be chillin’ right now with a spicy Bloody Mary). So yeah I went to a crazy bachelorette party last night and had a great time because I was NOT in the wedding. I served up these SUPER yummy Wonton Squishies, which are like those cream cheese wonton appetizers at Chinese restaurants, only not fried, and of course spiced-up. Totally tasty, luscious mouthfeel and low fat too! They were gone in like 10 seconds. All you do is roast a few spices, mix them with the cream cheese (I used the Tofutti stuff because the Bride is dairy free) and you just plop it into wonton wrappers with a happy little jalapeno ring. Thing is, the filling is such great stuff. I made more on purpose.

Homemade pita breads and homemade hummus
Pita recipe I roll mine out super thin, wait a few minutes then slap them on a very hot pizza stone and watch them puff up through the front of the oven without opening the door (opening the door makes them deflate sometimes so opening it prematurally means unpuffed pita)

Hummus recipe I only made a half batch of it and i think the tahini was a little bitter. If you have nicer tahini use the full amount I guess. I ended up adding extra lemon juice too.
