Apples! Redux

Apples, apples, apples

I want to thank all the people who responded to my call for recipes including apples - your comments were very inspiring. The least I can do in return is share some of the stuff I end up actually doing with my apples. Here's what I did today:

Applesauce

I made applesauce for the first time recently. I adapted my own recipe from this post at Tigers & Strawberries and it was tasty. Perhaps a bit too much ginger for my own personal liking, but tasty none the less.

Before you can get to the applesauce though you have to convince the apples to take off their outer layer. My apples went to the next level and made it a striptease: Plop in a quarter and see the show. )

So, a few weekends ago, my mother, brother and I went and picked apples. We brought home 33lbs of apples, for a very good price. It's been about two weeks and we're down to... hm, 30lbs? Exactly.

I need apple recipes, something besides pie or applesauce. We really want to try to make apple cider, but I have a feeling that involves a process loger than we're capable of handling. Does anyone have a simple apple cider recipe that you can make at home (or something similar, even?).

And trust me, I've been all over the internet, trying to find good apple recipes. I'm getting kind of desperate.

Also, I'm looking for a really awesome Apple Crisp recipe, to surprise my dad with. It's always been his favorite, and I know he's just itching for my to make him one, what with our abundance of fruit, and all.

And unlike the last post I made, in which I, ahem, begged for recipes for my anniversary (thankyouthankyouthankyou for those, by the way), there's no restrictions on cooked apples. My family loves cooked apples, even if my man doesn't. :P

So, since its fall here in Toronto - we are blessed with a bounty of beautiful yummy apples :) Theres nothing like going apple picking on a crisp autumn day and then returning to the house for apple pie and cider :D

but whats YOUR favorite apple dish?

Mine has to be one of the simplest around...yes i eat it like EVERy day in the fall. Takes like 20 minutes to prepare, and tastes like youre having a naughty sweet treat, but with virtually NO CALS (ok, some...but just the apples - everything else is cal free!) You can make it with lots if you wanted to i guess....but really no need :)

Oh...and on another note, i did apple cider from scratch recentlly (yes, pressing the apples and everything) ..... and while its amazingly good....its really not worth the trouble unless you have the proper equipment. i do have a good guide though if anyones interested.

Anyways...my super simple fave apple dish of all time behind the cut

Applesauce and then some

Greetings pornistas,

My sister has to make baby food for a Parenting project for school, and she's decided to make applesauce. But not your average, everyday applesauce - she's going for applesauce with a kick. What fruits would combine well with apples while being baby-palate-friendly?

chocolate ginger cake

(from moosewood restaurant's book of desserts)

Blend:
2/3 cup buttermilk (I used acidulated milk - milk with a splash of lemon juice or vinegar: it worked fine)
2 eggs
1/3 cup applesauce
1 tsp vanilla
1/4 cup vegetable oil
1 1/4 cups packed brown sugar

Sift together:
1 cup a/p flour
2/3 cup cocoa
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

Blend dry ingredients with wet.

Gently stir in 1 tblsp grated ginger root.

Bake at 350 for 30 minutes or so, until tester comes out clean.

(We had this slightly warm, with pumpkin ice cream, and it was absolutely divine. Not too sweet, and the ginger gives it a really nice twist.)
