Blueberry Cake
Pirate wants blueberry cake for her birthday. This is the same request she made for her 2nd birthday. That cake was rather too dense and nowhere near blueberry enough. So I tried a different tack this year.

I modified the Good Housekeeping Book of Desserts Yellow Cake recipe.

2 1/4 cups of cake flour
1 1/2 cups sugar
3/4 cup shortening (reduced to 1/2 cup)
3/4 cup milk (eliminated entirely)
2 1/2 teaspoons baking powder (eliminated entirely (which might not have been a good idea now that I think about it...)
1 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon almond extract (eliminated entirely)
3 large eggs

Mixed the salt in to the sugar. Creamed the sugar and shortening together. Added eggs individually. Added vanilla extract. Added flour. Folded in one can of blueberry pie filling.

It's in the oven right now but it looks perfect (like my chocolate cherry cake that I make with a chocolate cake mix and a can of cherry pie filling) and the bit I licked off my finger tastes delightfully of blueberry.

I can understand eliminating the milk to compensate for the liquid in the pie filling, and the almond extract I assume because of the flavor, but why take out the baking powder?

Cause I forgot and it was past 0200. :-p And was slightly worried that the baking powder would interact with the blueberries and turn the batter green.
