I'm not the original poster so I'm not sure what recipe she used, but Alton Brown did a show on avocados and made avocado frosting:

That's the one. I added a touch more lemon extract than he calls for, though, because I really love lemon.

I made these last month! They were pretty good, but I put raspberries in it for shits.

The plates are mostly white, with blue rims. The pink cast is just from the funky rangetop lighting.

That's brilliant! Avocado has such a mild flavour - this would be a fantastic way to make vegan icing without resorting to *shudder* shortening!

Well, they look cute and I would definitely TASTE them before making negative comments about them. Thanks for sharing...I like how the icing almost has a glittery look. How did you find the taste?

It's not the kind of frosting you'd want to eat by the spoonful, but with the cupcakes it was very nice.

Homemade lemon curd is the most delightful stuff ever. Super-easy to make, too. My husband eats it by the spoonful when I make it! This is the recipe I use, but I do it in a double-boiler over medium heat just to make sure the eggs don't curdle. So yummy!

I love home made lemon curd ... have a really hard time not walking around with a spoon all day long. I always make it in the crockpot and it turns out fantastic.
