blueberry sugar muffins & fudgey brownies
the cupcakes i baked the other day had me craving sugar and sweets since i couldn't use them to kill my cravings because they weren't vegan. SO, you can only imagine that i had some sugary, sweet, yummy VEGAN things waiting in the oven for me not long after.






vegan brownies.

ingredients:
2 cups unbleached all-purpose flour
2 cups white sugar *
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1/3 cup vegetable oil
2/3 cup unsweetened applesauce **
1 teaspoon vanilla extract

* they were very sweet brownies. i'm sure you could take half a cup away and they would still be sweet enough. but my mouth is full of sweet teeth, so i didn't mind at all!
** you can remove the apple sauce, but you will have to have an entire cup of oil. personally, i don't prefer thousands of calories in oil when i could just take them away using something far less calories. annnd, they were still dense and fudgey with the applesauce.

directions:
♥preheat the oven to 350 degrees f (175 degrees c).
♥in a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. pour in water, vegetable oil, applesauce and vanilla; mix until well blended. spread evenly in a 9x13 inch baking pan.
♥bake for 20 to 25 minutes in the preheated oven. * let cool for at least 10 minutes before cutting into squares (or spoon into bowl and devour the fudge).

* i baked them for only 20 minutes because i like my brownies a bit undercooked. also, the sides were beginning to get cakey. a brownie is not cakey. if you would like to bake it all the way through, bake for 25 to 30 minutes. it is not necessary though since there is no egg in this recipe. ALSO, once the brownies had cooled, they were easier to square and actually hold in your hand. so don't worry about it if you undercook them. just let them cool and then they will be mobile in something other than a bowl.









blueberry crumb muffins.

ingredients:
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 tsp cinnamon
1/3 cup vegetable oil
¼ cup blended tofu
1/3 cup almond milk *
1 tsp vanilla
1/2 cup fresh blueberries
1/4 cup white sugar
1/4 cup brown sugar
1/3 cup all-purpose flour
1/4 cup margarine, softened
1 1/2 teaspoons ground cinnamon

* you can use any type of vegan milk (soy, rice, etc.)

directions:
♥preheat oven to 400 degrees f (200 degrees c). grease muffin cups or line with muffin liners.
♥combine 1 1/2 cups flour, 3/4 cup sugar, salt, baking powder and cinnamon. mix vegetable oil, tofu, almond milk and vanilla with flour mixture. fold in blueberries. fill muffin cups right to the top, and place several clumps of the sugar topping on the batter.
♥to make sugar topping: mix together 1/4 cup white sugar, 1/4 brown sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. combine mixture, and clump over muffins before baking.
♥bake for 20 minutes in the preheated oven, or until done.

Damn you, those muffins look great and after eating most of the cinnamon rolls I made a few days ago I can't dare make something this soon afterwards.

Just out of curiosity, if you are vegan, why would you bake something that wasn't vegan? I guess I always see that vegans are so out of principle and it doesn't make a lot of sense to break that rule in your kitchen even if its not for yourself!

Anyways, so not vegan, but those brownies look like they are dying for a scoop of ice cream!

haha, they were so good ! but my sweet tooth is completely satisfied now so i won't be baking for a while. xP

i just explained this to another girl... i'm practicing baking for my sisters bridal shower and until a couple of days ago, i hadn't yet figured out a way to replace eggs (we don't have energ egg replacer here) that didn't involve bananas. i made as many substitutes as i could (like almond milk and soy cream cheese) but some things were necessary. i won't be doing it again, though. :) i've just gotta keep tofu, loads of vegetable oil, almond milk, and margarine on hand. =)

i knowww ! i found the perfect icecream to go with them, too, AFTER i had made them ! uuugh, vegan icecream gets expensive though and the tubs so small, i have to eat it all. D:

And as a general substitute, milled flax seed replaces eggs (1 tablespoon flax seed, 3 tbsp water) in baking, and it also adds Omega-3 oil to the food. You can also swap the oil for unsweet apple sauce on a 1:1 basis so you can pretend it's health food - well, fat free, no cholesterol, veg*n friendly, AND it's rich with Omega-3 - see, health food!

ooh, flax seeds ! we have loads of those here (my moms on a dieeet, total health kick) i'll be using that, for sure.

i've tried swapping applesauce on a 1:1 basis, but it makes all my things come out way too cakey. i'm not a cakey person with brownies or cookies. icky. :P

hmm - not had that problem with apple sauce. Maybe you could put a little oil in as well? Maybe do 0.25 oil and 0.75 apple sauce?

lol, that is what i do. check out the recipe for these brownies, it's exactly what i did. :P except 1/3 oil, 2/3 apple sauce.

Well you've not satisfied any of my sugar cravings: you've ignited them!!! So I'm not vegan, do I understand the almond milk and tofu substitute for milk and eggs (so I could, like go make some NOW)? And my middle child is with you on the brownies: gooey=good. Also like the applesauce/oil combo. Can't wait to try these!

hehe, yup ! :) 1/4 cup of tofu = one egg. :D
i totaaaaally recommend them ! but make sure you watch the cooking time. :) you might also want to do a little bit more oil to make them more dense because you'll have to cook them longer because of the egg. cooking them longer will take away the gooeyness. D:

These look great! Did you use vegan sugar? Most commercial white sugar (unless it's from beets) is not always vegan, as charcoal from animal bones may be used to filter it.

thank you. :) i've never heard of that. :S that sounds almost as bizzarre as some small water systems filtering their water using animal bones, though.
