broccoli sausage potato soup.
there were plenty of potatoes laying around, along with jimmy dean's pork sausage that's been sitting in the fridge for a month.
so i thought i'd make some soup!

recipe was based on this, but i did my own modifications because i didn't have ham or regular milk on hand. also, i didn't use any salt because i used cubed buillon.
recipe i did:
package of hot pork sausage
3 cups red potatoes
1/2 cup (or more) of broccoli
1 whole onion diced
3 1/4 cup water
2 cups soy milk
2 cubes chicken bouillon, or to taste
5 tablespoons of flour
5 tablespoons of butter
pepper to taste
1. Cook pork sausage in stockpot halfway cooked and sautee (sp?) onions in the same pot. Once both browned up, toss in red potatoes and 3 1/4 cups water and let it simmer for 10 minutes. Mix in chicken bouillon cubes and let it simmer some more.

2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes. Add broccoli in ( i didn't want to add it in step one, it would have made the broccoli really soggy. )
3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve!
