Meyer Lemons
I've just bought a box of about 10 Meyer lemons. These jewels are beautiful, and I'd like to do something special with them.

Any thoughts on desserts and/or sweet baked goods to make with these lemons?
Specific recipes would be great.

Oh, Meyer Lemons! My favorite. I bought some at our open air market last weekend for - if you can believe this - a quarter a piece.

So, ok - Martha Stewart loves them and uses them in SO many things. here are the recipes that come up in a search for Meyer Lemons on her site. I've made several things here so if you want my endorsement on anything in particular I'll point some out!

I also had some beautiful Meyer lemons and made a quadruple batch of curd. I put them in pretty confiture jars and handed them out as gifts. The recipe below made enough for three half-pint jars.

The recipe I used is from Gourmet:

3 to 4 Meyer lemons (about 1 lb)
1/2 cup sugar
2 large eggs
1 stick unsalted butter, cut into 4 pieces

Finely grate enough zest from lemons to measure 2 teaspoons and squeeze enough juice to measure 1/2 cup. Whisk together zest, juice, sugar, and eggs in a metal bowl and add butter. Set bowl over a saucepan of simmering water and cook, whisking, until thickened and smooth and an instant-read thermometer registers 160°F, about 5 minutes. Force curd through a fine sieve set into another bowl. Serve warm or cover surface of curd with wax paper and cool completely.

I definitely also suggest curd. Really yummy with Meyers and very versatile.

Or you could make a homemade lemon meringue pie! Mmmm.

this is my recipe

3 eggs
3/4c. sugar
1/3 c. lemon juice (about 2 lemons)
1 tbsp. lemon zest
4 tbsp. butter

whisk eggs, juice and sugar over a pot of simmer water until thickened slightly. remove from heat and whisk in butter until melted, then whisk in the zest. viola!
