It's fish night at my house.
Salmon night, to be more specific. My husband and I picked up a lovely piece of Atlantic salmon at Whole Foods today, and decided to try a friend's recipe for it. :)

It's got a lovely crust of lemon zest and herbs de Provence. We just put it in the oven to roast, and will be having it with a California chardonnay and roasted baby red potatoes. The house smells absolutely divine right now.

It turned out really well, overall, though next time we'll want to go a little bit easier on the lemon. We used the juice and zest from two of them on the crust, and I think that maybe the zest from two and the juice from only one would probably be enough.

Mmmm that looks so good! I love fish, especially salmon, but my husband won't eat fish more often than once every three weeks. :-(
I could eat fish every single day!
