Who says Kraft Dinner has to be unhealthy?

This was very tasty and very healthy. Any innovation that gets my boyfriend eating vegetables HAS to be a good thing!



How to make glitteringlynx's "healthy" KD

In a pot, boil some water. Once boiling pour in the pasta from one box of Kraft Dinner (in the USA I hear it's known as Kraft macaroni and cheese).

In a wok (or large skillet) pour in a little oil, turn on to to medium-high heat, then add some salt (this is a trick I learned from one of my cookbooks on how to cook Chinese food). Chop one hot dog into thin pieces and put in wok/skillet. Then add about 1 cup of frozen vegetables. I then added one cut up celery stalk, some snowpeas (aka mange tout). Using a spatula and ladel, toss like a salad often (this is called the "chow" method in the Chinese cookbook, and it's the style you're supposed to use with woks).

Once everythign seems cooked (the macaroni probably isn't ready yet) pour the cheese powder over the vegetables. Yes, vegetables. :) If it doesn't dissolve, gradually add some water. Add 1 tbsp of butter if needed (some cheese powders dissolve in fat instead of water and I was using a no name brand so this applied to me).

Now given the water from the frozen veggies and everything, the cheese is going to look watery. Tear 2 process cheese slices (it will blend with the fake cheese you're already using, but you could try real mild cheddar; I just didn't have any ;D) into tiny pieces and drop them into the skillet as you tear.

Chow chow chow! Don't let the veggies char, don't let the cheese stick! :) Keep adding the cheese as you go. Keep stirring until it's fully covered. Your macaroni is probably ready. Drain the pasta, then put the pasta into the skillet/wok. Mix completely until everything is covered.

Serve!

Feeds approximately 2 adults or 4 kids, depending on appetite.


EDIT: Because apparently my sense of humour didn't quite get across, I'm going to be blunt: THIS IS NOT WHAT I WOULD PERSONALLY CONSIDER HEALTHY. I was being very facetious when I said that.

Again, I have a nearly-30 year old boyfriend who will not eat vegetables. He will eat a little, but generally speaking will just stick to meat, cheese and starch. So I was attempting to make something which would be packed with vegetables and tasty enough even he would eat it. Not only did he eat it, HE LOVED IT. So this is a great idea for anyone with stubborn partners or children who just don't want to eat their vegetables.

Also, I knew it was walking a fine line between what may or may not be permitted on this community. However I also knew the community is moderated at this time and figured I'd let the mod make the call whether this post belongs here. The mod hath spoken.

How I make Kraft Dinner healthy: add veggies but also use plain yogurt instead of milk/butter. Gives it a nice tang and happy live cultures.

KD is never healthy. It just isn't. Sure you made the low fat version, but the hot dog, oil and processed cheese food negate it.

Not healthy either, but I had some amazing mac n cheese at this nice little spot in Denver called The Black Pearl. It was shell pasta with a mix of cheese, no cheddar and small chunks of gorgonzola, and truffles sauteed in butter and garlic. I called it grown-up's mac n cheese. :D

This post brings back memories of when I used to eat Kraft Macaroni and Cheese. Now, I'm not a big fan. But, before, I loved it. Oh, memories...thanks for posting :)

There's so much hate in this comm, I'm sorry you've been taking so much flak from people. I think it's a fab idea to try to get someone to eat more vege's. I love love cheese pasta, and I've never had a boxed KD or anything like it. I'm afraid I just couldn't stand to - Plus I love making cheese sauce from scratch. I'm one of those weird people I'm afraid that with certain things just doesn't like shortcuts. A huge thumbs up to you for getting those vegetables in him with something that he likes! It's the only way to start slowly converting him. ;)

My other half started out not eating many vege's, but I soon converted him! *Evil grin* Though I'll never win him on the leafy greens, broccoli or sweetcorn.

If he likes pasta, why not try a bolognese sauce loaded with vege's - But hide them! Grate them up before cooking, or cook the vege's (whatever you like really, onion, mushroom, carrot, peppers, courgette) and then stick them in a blender - at the same time get your minced beef/whatever in the pan to start browning and once vege's are smooth, add back to the pan along with a couple of tins of chopped tomatoes, tomato puree, garlic and herbs and cook it well for 20-40 minutes. Sneaky food!

from a recently converted vegan, I have to say your recipe has me cravoinv some cheese, damn you!

Sorry you got so much flack about this post. My sister and I used to make "fancy" versions of mac and cheese like this when I was a kid and we had great fun trying to figure out now things to add.

Not that I see a problem posting this here, but you might find the folks in [info]trashy_eats appreciate this sort of recipe more. (It's a fun community in general. Lots of creative ways to doctor packaged foods or reuse leftovers.)

Very creative!

A recommendation that worked on my vegetable-hating stepson: "soup up" some healthy boxed soups. I get a variety of boxed vegetable soups from the "hippie yuppie" stores (Whole Foods), add a little cream and chicken soup base, some chopped vegetables, spices, and cook for a half-hour or so to blend the flavors. Serve with shredded cheese on top. He takes only a half bowl, but he actually likes it!

I actually think your recipe looks very good--but if you want to make it really healthy, I would suggest steaming the veggies and cooking the hot dogs separately in water or the microwave. I understand the hot dog and macaroni and cheese love--I am a serious food snob and that is still a comfort food I crave sometimes.

Also, instead of using processed cheese "food" slices, maybe investing in a little bit of artisanal cheese? I like grated gruyere in my mac and cheese sometimes, and even though all cheese is high in saturated fat, artisanal cheese sometimes has the tradeoff of having more calcium and/or iron.

KD was always considered "a treat" in my family *chuckles* Mom always had meat and potato meals every night so KD was decadent! I have to admit that my KD recipe of KD + hamburger + Tomato soup is right up there in my all time favorite meal list!

*muses a bit here* It is interesting that people took offense to this post. Frankly, I think that any food that is creative, yummy and has thought put into it is "porn worthy". My opinion, fwiw, is I find this post more interesting than a pretty post following exact instructions from a gormet recipe *shrug* but I'm weird that way.

*I* got your humor. Thanks for sharing. I just may try it with my kids who don't touch veggies but love mac and cheese. I'd heard of "sneaking" them in by pureeing them, but never thought of just having them in there for them to see and eat.
