food crisis
hi guys, i'm back again with another question.

i've decided to try the Buttery Lemon Shrimp recipe from the book Superfast Suppers by CookingLight. i bought all of the ingredients, but it calls for 1/4 cup yogurt-based spread (such as Brummel & Brown) and they didn't have it at ralphs. i looked for another kind but failed. so, i was wondering, do you think it really matters that i'm omitting the spread? i'm supposed to cook this tonight for some people and i'm so mad at myself for not just going to a different store to look.. but at the time i was in a hurry and wanted to get home.

this is the recipe just so you understand:

1/4 cup yogurt-based spread
2 tablespoon lemon juice
1 tsp worcestershire sauce
1/2 tsp paprika
cooking spray
1 1/2 lbs peeled and deveined shrimp
1 tsp old bay seasoning
2 tablespoon chopped fresh parsley

I think you should use margarine or butter instead. B&B pretty much spreads like margarine so I would think it adds a thickening quality and flavor to the dish.

I know this is probably a little late, but...wouldn't that have made it the "Buttery" Lemon Shrimp recipe? Just use margarine or butter instead?

i know, i feel like a complete retard for not figuring that out. but i used butter before i checked back on the comments so it turned out ok. :)

I love B&B, but to be honest, I never cooked with it because it gets quite watery when melted. I'd be curious to know how this turned out with using it.

Although I live in the UK, no B&B here, alas!

Would you mind if I asked you to post the rest of that recipe? I happen to have all those ingredients in the house right now (including the Brummel & Brown spread) and I'd like to try it.

sure.

combine first 4 ingredients in a small bowl; set aside.

place a large nonstick skillet coated with cooking spray over medium heat until hot. add shrimp and seasoning; sauté 2 minutes. add yogurt spread mixture, and cook 3 minutes until shrimp are done. spoon shrimp and liquid into individual serving bowls, and sprinkle with parsley. yield: 4 servings (serving size: 6 ounces shrimp and 3 tablespoons sauce)

also, it gives a little recipe for caesar salad on the side. do you want that, too? :)
