Now, then: I got an email from Epicurious today, which featured the above styling: French fries in a drinking glass.

It's interesting and amusing, but would anyone ever actually serve French fries like this?

I'd be afraid that if they were hot, the steam would condense on the glass and end up making the fries all soggy. Maybe if it were lined with paper.

I'm thinking reflection.

I'm relatively certain a food stylist would not put a bunch of hot fries into a glass- precisely because condensation would ruin the shot (or at least necessitate a whole lotta Photoshopping time). I'll ask my friend Matt next time I talk to him since he does this sorta thing for a living :d

At Brasa, we serve our fries in a paper cone held up by a spiraling wire stand, which is not the same but is kinda similar.

I used to buy fries from a stand near my local market, and they served them upright in a polystyrene cup... :D

It's lovely. Drives are fun until you realise that you've run out of road or all the road signs tell you it's 2 miles to the White Horse (regardless of which direction you go).

it'd look neat if it were lined with butcher paper, so as not to get all nasty soggy, and suck up any additional bad-for-you grease.

That's what I was thinking, too. Yeah, I'd do individual servings in paper-lined glasses. Besides, that way they don't soak up any juice from anything else on your plate. :) (Yeah, I was that kid who didn't want any of her foods to touch each other.)

I do too, but I like to keep my fries crispy, and mixing them with wet stuff makes them soggy.

I've only seen this done with parchment paper lining the glass. I know Barmarche and Schiller's (both in NYC) serve their fries standing upright, but I don't recall if it's in parchment in a wire stand or in a glass.

Sure. If I wanted to give fairly even portions. It also makes for a nice upright presentation when other food is flat on a plate like a sandwich.

That is a lovely picture, but the fries do not look appetizing to me at all. They look greasy, like they would just be squishy when you bit into them instead of having a nice crispness.

The glass is pretty tho.

I once got fried green beans in a metal cup (with a paper lining) from a French bistro, and I thought it was a pretty cool way to serve them! :) But yeah, I agree with some of the others who've said a paper lining is probably a good idea.

I agree that a paper lining would be a good idea, but I've eaten fries served in cups many times, usually the fast-food, waxed-paper kind. Krystal used to serve theirs that way, and Boardwalk Fries serves in cups.

Oh man, now I'm craving Boardwalk Fries. MMmmmmmmmmmm.

a local place i go serves fries in small terra cotta pots. i don't know if had anything to do with what they are served IN, but they are excellent fries.

A pub in London used to serve a 'pint of prawns' which were pretty good - fat largeish prawns in a snack-size portion. More of a gimmick than anything else though as anything in a glass is kinda fiddly to get to and it's not very elegant when you have to upend it over your plate anyway to get to the contents at the bottom.

I think I might like them served like that. You could pre-warm the glass and that would help hold their heat, and it looks easy to pluck them out, one by one. Maybe as part of a tapas arrangement? But I'm sure they're charging ten dollars more because they're in a nifty glass.

a lot of food stylists do things to food that you would never see at a restaurant or at home... wouldn't it be boring if you only saw pictures of fries in baskets or on plates? :)

No, because that is seriously not enough fries for my taste. Now last night I had fries served in this paper lined handled small bucket thing, similar to the wire stands, and THAT is my size of fries.

There's a Belgium pub in London (the Dove Tail Bar, Jerusalem Passage, Farringdon, FWIW) that serves fries in Hoegaarden glasses. (With mayo, of course!)

Having had several pints of fries there in my time, I can tell you they don't go soggy and the glasses don't fog up. Or at least not that I noticed :)
