The spread.


We had a little booze available.


Certianly enough.


Yum!


Buffalo chicken dip.


Brownie and a variety of cookies.


Homemade Chex mix.


Molded chocolates.


Someone likes slippery nipples.


Pumpernickle breadbowl with a dill and chipped beef dip.


Sausage rolls (or binulati).


In the center there are the rum, bourbon, Kaluah and mint balls.

I thought it was a lasagna or a gratine of potatoes ...what IS buffalo chicken dip? :)

Oh, and the sausage rolls looks very nice. It's so hard to get a good ratio of roll to sausage so that each bite is a flavourful mouthful.

Buffalo chicken dip - I used 1 chicken breast (chopped in my food processor), 2 bricks (1/3 less fat) cream cheese, 1/3 cup of wing sauce, 1/4 cup of hot sauce, ranch dressing (I didn't measure this, I just dumped it in... I probably used about 1/2-3/4 of a cup), a handful of grated sharp cheddar cheese mixed in and another handful on top. Mixed it all together in a oven-safe dish, topped with cheese and baked until bubbly. I served it with baked tortilla chips.

Oh, I had the buffalo chicken dip at another party this NYE, it was wonderful. Here is the recipe that the hostess gave me, since I will make it again. Let me know how it compares to your's

2 - 5 ounce cans chicken, drained (by the tuna in the grocery store)
2 – 8 ounce packages cream cheese, softened
1 cup ranch dressing
¾ cup Franks red hot sauce
Shredded cheddar cheese, you decide how much
Frito Scoops

Beat cream cheese, ranch dressing, and red hot sauce.
Fold in shredded chicken.
Spread mixture into pie plate sprayed with Pam.
Bake at 350 degrees for 15 minutes.
Add cheddar to top and bake an additional 10-15 minutes.
Serve hot with Frito scoops.

Since I am adverse to meat in a can, I'll probably use chicken breasts that I cook myself.

The first time I made the buffalo chicken dip, I thought it was good but knew it could be better. The first time I made it I used 1 large can of chicken, 2 bricks of cream cheese (I choose the 1/3 less fat cream cheese), 2/3 of a cup (approximately) of red hot sauce, about half a bottle of bleu cheese dressing and a bag of shredded cheddar cheese (half mixed in, half on the top). Mix together, throw extra cheese on top, bake until bubbly. The thing I didn't like about the dip that time was, I think, the bleu cheese and the lack of spicey flavor. Hot sauce adds heat but I find it lacks deliciousness.

The second time I made it (for NYE), I tweaked it and it was probably 5 times better.

That time I used 1 chicken breast (chopped in my food processor), 2 bricks (1/3 less fat) cream cheese, 1/3 cup of wing sauce, 1/4 cup of hot sauce, ranch dressing (I didn't measure this, I just dumped it in... I probably used about 1/2-3/4 of a cup), a handful of grated sharp cheddar cheese mixed in and another handful on top. Mixed it all together in a oven-safe dish, topped with cheese and baked until bubbly. I served it with baked tortilla chips.

The sausage rolls are a mild sausage rolled in white bread dough, before rolling and slicing I sprinkled the sauasge with salt, pepper, oregano, garlic and some Adobo seasoning. Bake at 350 until golden.
