Amazing: Bacon Apple Pie
Yesterday was my birthday. Ever since [info]xlagartixax posted the bacon apple pie recipe, I knew what I must have for my dessert. I made a few alterations...

Oh.
My.
Word.

This is probably the pie I'll be known for when I'm old and gray.
I used Braeburn apples, added a couple of cracks of fresh black pepper and a dash of cayenne and I ditched the top crust in favor of a crumb topping with cheddar cheese.

As we were cleaning our plates I said, "Oh, I was going to take a picture." Next time. Next time.
I had friends over so there would be no leftovers. There weren't. There was, however, talk of everybody in the room making it soon.

My favorite way to eat an apple is with big bites of the sharpest cheddar I can find in my mouth at the same time, but I never thought to put it on top of a pie. That's genius. Any chance you could give us the recipe for your cheddar crumb topping, pretty please?

You know...I just googled for "apple pie cheddar crumble topping" and got a bunch of the same recipe, so that's what I used. It worked really well, but I can't claim it as "mine"...

This is what I followed:

3/4 cup shredded cheddar cheese
1/2 cup flour
1/3 cup sugar
1/3 cup butter
(mix until crumbly)

I actually only had 1/4 c butter on hand, but next time I would make sure I had the 1/3 cup (and maybe just a bit more). I also used the sharpest cheddar I could find (I think it was 18 mo.). I think I'd try to find some sharper cheese, too. I mean the pie was amazing, but there is always room for improvement next time, eh?

ZOMG I LOVE the pepper idea. And the cheddar cheese topping too!

I read somewhere on the internets that people are putting vodka in the crust, too. This recipe really took off!

I wonder if the same could be done with a bacon pumpkin pie...hmmm...

You know, I forgot to mention that I cooked the heck out of the bacon. It was good and crispy. I thought it added a nice texture to the overall pie...and since there were different sizes of the bacon pieces, it was incorporated well. Since your bacon was still kind of floppy when you put in in...did it cook more or was it a bit chewy in the end?

The pepper was hardly noticeable, but there was a nice little tingle to the tongue at the end.

I have to say that I'm a bit of a pumpkin pie purist, but the bacon/pumpkin combination sounds like an amazing pasty...
