Current mood: contemplative
Entry tags:liver, potatoes

liver and onions sort of sweet and sour
liver (sliced really thin)
flour with salt and pepper
1 lb bacon
2 large onions

Fry bacon in pan and remove.
Add onions and fry until tender and remove.
coat liver with flour solution and fry 3 to 5 minutes per side
add 1/2 cup sugar and 1/2 vinegar to pan
add the liver, bacon, and onion to pan

Okay this is what I can remember of the recipe my aunt gave me. I left it on her counter and didn't remember that I did until I got home. I can only remember two things that were supposed to be added to the flour, but I could have sworn there were 3 things. I want to make it for my boyfriend. I of course plan to serve it with potatoes, but I can't decide how to serve the potatoes. My grandma normally serves it with mashed, but I want to try something different.

On a side I realize liver is probably not the most popular dishes here, but hey...I can't resist it when she makes it like this.

If the liver is 'sort of sweet,' are the onions cooked until they caramelize a bit?
Liver and onions is a fine simple dish that no one should turn their nose up at, though organ meat shouldn't be eaten too often. It's also a great way to treat tougher and stronger livers like beef and pork. Which animal are you using? Pork liver smothered with onions is a really fine dish, I must say.
For chicken or veal liver I prefer something a bit gentler. Once in Rome we had very thinly sliced veal liver dredged in egg wash and barely fried. I never would have thought of serving veal that rare, but it tasted almost like fois gras.
As for an alternative to mashed potatoes: I'm not sure what to say, mash is such a classic and delicious side for the dish. Why not a variation of it? Roast a head of garlic and drop in a clove or two when you mash the potatoes (roast garlic is useful to have around), or boil a coulple turnips, or a piece of celeriac, or a peeled kohlrabi with the potatoes and mash them together. Or try the Dutch staple, boil some finely sliced kale with the potatoes and mash them together.

I use beef liver. Sorry I didn't specify.

So caramelizing the onion would be best?

Also I very rarely eat this. It's something I would have as a treat sometimes when I was at my grandma's house.

I was actually considering serving it with potato pancakes. I know Greg likes those. Greg being my boyfriend.

I haven't had liver since I was a kid but it seems to be really popular in British cooking. I picked up this cookbook that was made in London and half of the meat recipes involved liver!

I'll have to break down and try one of them.

I had it when I was younger and didn't like it. My grandma cooked it this way for me and I liked it. It might be something that you have to get older to like, but then again I tried liver and onion by some one else at one point and I didn't like it.

If you find a recipe that you like could you post it? I may be specific on how I like it, buy my boyfriend isn't nearly as picky.

Especially if it's made right. P:

Too bad it's not that good for you in certain ways.

But it's full of delicious iron!

True, but it's also an organ meat. Organ meats are something you shouldn't eat that often. I might cook it more often though because my boyfriend has iron issues.

What exactly does it taste like? I've only had chicken livers, and don't like them.

It's not uncommon for people to not like chicken liver. I know I don't like it.

You'd really have to try it to truly understand what it tastes like.

Well different animal livers taste a little different. But overall it should be creamy, a very faint hint of bitter, and very earthy.
