A couple of days of meals :)

The salad is dressed with mango and chilli dressing...

Mango and chilli dressing drizzled over the meat and salad.

The toffee and ginger wine were added at the end...

How was the apple and potato rosti with the brie center made?

Grate one large potato. Put the grated potato in a cloth, and squeeze out the liquid.
Grate half an apple, and add to the potato. Season the mix with some salt.
Place a chef's ring in a frying pan with a little oil, and put half of the potato and apple mix into the ring, pressing it down. Add a healthy chunk of brie, then the rest of the mix on top, making sure it's pressed down.

After about three minutes on a medium heat, get a spatula under the chef's ring, drizzle some olive oil on the top of the rosti, and take another spatula to hold bot ends of the ring, and flip. (that's the tricky part!)

Leave to crispen on the other side for three minutes, then get the spatula and lift the rosti, ring and all, to the plate. Lift the ring off with a cloth...

As long as the potato and apple has been pressed down well, there won't be much seepage of the brie, and you'll get a very nice gooey centre...

Usually, a rosti doesn't have anything in the middle, and no apple either! But I got the cheese idea from one show, and the apple one from another :)

Could you share the chicken/salad recipe (or at least the mango/chili dressing recipe)? It sounds very nice :)

Unfortunately, the dressing was store bought...

The chicken was easy enough... Make a marinade of mayo, ketchup, chilli flakes, salt, and pepper, coat the thinly cut chicken breast pieces, then roast in a dry pan until cooked... Serve on a green leaf salad :)

Those meals look beautiful. Thanks for explaining about the apple and potato rosti. I hadn't ever heard of rosti before but the pictures and your descriptions piqued my interest.
