We had rice salad today, too, with tomatoes, pickled green beans, edamame, shredded carrots, onions, and a red wine vinaigrette. Yum.

Sure, but as usual, I winged it, making it up as I went along, so keep that in mind as you go.

Ingredients

2 cups cooked wild rice, room temperature
1/2 cup red onion, 1/4" dice
1/2 c red pepper, 1/4" dice
1/2 c basil leaves, firmly packed
3 tablespoons whole grain mustard
3 tablespoon mirin
1/2 cup olive oil
Kosher salt to taste
Fresh ground pepper to taste

1) Cook wild rice to al dente and then spread on cookie sheet cool. I cooked my rice in this instance in bacon fat with whole garlic cloves and some bay leaves.

2) Add mustard and mirin to food processor, pulse once or twice. Add basil and puree. Drizzle olive oil in until a thick emulsion is formed. Taste and adjust flavor with salt and pepper.

3) When rice has cooled, pour 1/2 of the vinegrette over and fold in diced vegetables. Allow mixture to sit for 1 hour. Taste for seasoning and either add more salt or more vinegrette.
