Substituting for almond extract? (With Nectarine Pie recipe!)
I got a pie recipe I'd like to try, but it calls for almond extract and my daughter is highly allergic to tree nuts, so I'm debating substituting something else or just leaving it out altogether. Any suggestions?

Nectarine Pie

2/3 c. white sugar
4T AP flour
1/2 t. ground cinnamon
1 c. heavy whipping cream
1/4 t. almond extract
5 nectarines
1 9" unbaked pie shell

Preheat oven to 400 degrees F.

Place a large pot of water over high heat and bring to a boil.

Combine sugar, flour, cinnamon, heavy cream and almond extract. Set aside.

Place the nectarines in boiling water for 30 to 45 seconds. Immediately place nectarines under cold running water and remove skins. Cut in half and remove pits. Place halves in pie shell with the cut side down. Pour the cream mixture around the nectarines.

Bake at 400 degrees F for 35 to 40 minutes. Great served warm or cold.

Later: Thanks to all that responded! I'm probably going to go with vanilla, as that is the easiest for me and I have a nice bottle of Penzey's extract that I love to use.

Given the other ingredients, I'm thinking vanilla extract could work well.

Sorry, I should have added: I think [info]autumnnyte's suggestion of vanilla extract is a good one. :)

Vanilla will work. If you can find a brandy extract that would be nice, too.

Vanilla would work of course, but personally I'd go for something a little more perfumey - like orange blossom water.

Are you absolutely sure that your daughter is not allergic to the nectarines as well? Stone fruits are just tree nuts with more pulp around the "nut" after all. Maybe I'm a little overcautious here.

Answering the actual question: you can just leave out the extract, particularly if the fruit has good flavor of its own. Why mess with Nature's perfection?

After discovering her allergy the hard way, we had a pretty comprehensive set of tests done, so I think we are safe, but it's something to watch for. The odds of her actually trying it are pretty slim anyway, as she is right up there on the list of "World's Pickiest Eaters". Still, if I'm making anything with nuts in the house I want it to be big and blatant, with chunks of nuts visible so that she can't miss them.

May I ask what was your experience with the nectarine pie recipe? I made it tonight and could easily have used only three nectarines, I think. I laid the halves on the pie crust, then started stacking a second layer to fit the fruit into the pie shell. Even using a deep dish pie I was only able to fit half the cream mixture over the fruit before it ran over the sides of the tin. Did you have the same issue?
