Indian feast - Part 2
I bought a box of papadums a while ago because they were in the bargain bin. Last week I made mango chutney to use up the mangoes I couldn't eat in time. From there I figured we needed an Indian night, and all of a sudden I decided last night should be it.

I was extremely impressed with myself, I usually end up in a flustered panic in the kitchen because some stuff is cooked way before something else or I don't have what I need or I can't tend to everything at once. I'm actually getting more organised now, and I can enlist the help of my b/f for some things.

Yesterday I made...
Dahl - We didn't eat this, this is for my lunches at work.
Naan bread - These tasted good, but more like scones than naan. I followed the recipe but these didn't turn out how I'd hoped.
Tamarind chutney - the last batch was almost out.
Rogan Josh - The centerpiece.
Vegetable pakoras - The entree, served with the mango and tamarind chutneys. Cauliflower, zuchinni and yellow capsicum.
Pappadums - well, we only had to briefly fry these to prepare them.

I am smitten with the tamarind chutney. How can something so sour and salty become so tasty?



Vegetable pakoras
Cauliflower pakoras are a true foodgasm. I think because of the nooks and crannies some of the batter cooks more than in other parts, so the flavours come through differently. And the cauli itself is tender and lovely.

I'd never prepared these before. It's amazing that in 3 seconds they grow and wrinkle and crisp up.

I'm annoyed that the photo is out of focus. The curry tasted awesome though.




I'll need to learn how to make some Indian desserts now. The only problem is the b/f and I can't eat so much food in one sitting!

Do you have the recipe for the mango chutney, by any chance? I've given up hope of finding it in a jar here (is that blasphemy?), so I'm going to make it myself.

Everything looks yuuuuummy.

750g Mango, cut into chunks
250mL apple cider vinegar
375g white sugar
1 onion chopped
1/2 tsp mixed spice
1/2 tsp ground cloves
1/2 tsp mustard seed
1/2 tsp curry powder
pinch nutmeg
1 dessert spoon salt

Place it all in a saucepan and bring to the boil while stirring. Then let it simmer until it starts to thicken up.

As for desserts...something like sweet yoghurt or rice kheer could be a light finish if you take small portions -- and they're usually made in batches so you'd definitely be able to indulge more later on. Or for something not entirely dairy based, perhaps sooji (semolina) halwa...

Here's a link for sweet yogurt -- it's pretty basic, but I don't think it's as commonly known. There are loads of recipes to choose from for the other two, though.

Looks delicious - I wish I could smell it! I make curry most weeks (especially lamb Rogan Josh) but I've never really delved into the bready side of things. Thanks for an inspiring post!

I use this recipe for my naan bread, it's not completely traditional since it doesn't use yogurt but the naan come out sooo good. I cut the sugar to 2 Tblsps and they come out best cooked on the grill.
