oven roasted fries

Out of the oven ...

Oven Roasted Garlic Fries. Soft fluffy insides, crisp on the outside.

Preheat oven to 425 degrees. Once pre-heated, place empty baking sheet in oven for 8 - 10 minutes to heat thoroughly.

While waiting, prep potatoes:

Wash potatoes and cut into lengthwise halves, and each half into fours - depending on size of potato. The potato wedge should be a little thicker than a 1/4" but under a 1/2". Keep them the same size for even cooking. Pat dry and place in large bowl.

Add 1/4 cup olive oil and potatoe wedges into a large bowl. Add salt and pepper (if you wish). Toss until potatoes are thoroughly coated.

Take baking sheet out of hot oven. Pour potatoes onto baking sheet and return baking sheet to oven. Leave alone for 40 minutes or until the bottoms look golden brown (this based off a gas oven). Take baking sheet out of oven after 40 minutes and flip over each wedge. Return to oven for another 10 - 15 minutes while you prepare the toppings. Remove pan from oven and place wedges on serving tray or in a serving bowl.

You can customize your fries at this point by topping the with fresh minced garlic, grated parmesan, parsley, or any combination of spices/herbs you like.

Enjoy! Anne

I would luv your recipe. I adore Garlic.

Below is another version of Fries that you may want to try.

Cajun-Spiced Oven Fries -- 4 Servings

4 russet potatoes (about 2 lbs, cut lengthwise into 12 wedges each
1.5 tbl extra virgin olive oil
1 tsp chili powder
1 tsp ground cumin
1 tsp sweet paprika
1 tsp dried oregano
1/4 tsp dried thyme
1 tsp salt
1/8 tsp cayenne pepper

Preheat the oven to 450 degrees. Line the baking sheet with tinfoil (easy clean-up) and coat it w/cooking spray.

In a large bowl, combine the potatoes and oil. Toss well to coat. In a small bowl, combine the chili powder, cumin, paprika, oregano, thyme, salt and cayenne pepper. Sprinkle the spice mixture over the potatoes, tossing well to coat.

Arrange the potato wedges in a single layer on the baking sheet. Bake for 20 mins. Turn the potatoes over and bake for 15-017 mins longer, until crisp.

Per serving: 109 cals; 5g protein; 12g carbs; 5g fat; 0mg cholesterol; 610mg sodium; 6g dietary fiber.

one of my favourite way to enjoy fries is to serve them on a thin layer of blue cheese spread drizzled with chili oil. :)

Ooh, that sounds wonderful.

Is there a recipe for the blue cheese spread? And how much chili oil?

Catherine.

I have a photo from last year sometime (I don't make fries that often). I'll post a link to it and you can check out the portions. They are horribly addictive. As for the blue cheese spread, any good blue cheese dressing will do unless you want to make your own.

I love making oven-roasted fries. I like to toss mine in olive oil, basil, and cayenne pepper.
