Low Fat Fettuccine Alfredo
I tried this recipe and it's excellent! Doesn't taste low fat at all. I thought low fat fettuccine was an oxymoron, too. To make it even healthier you can use reduced fat cheese and low sodium broth, but this is pretty good anyway.

Fettuccine with Shrimp Sauce



One cup fettuccine noodles (I used whole wheat bowties)
One half cup chicken broth
One sixth cup dry white wine
One half tsp. dried marjoram
5oz shrimp, peeled and deveined
1 Tbsp. cornstarch
2/3 cup milk
1/2 oz Swiss cheese, shredded
1/2 oz mozzarella cheese, shredded
onion, green pepper, mushrooms, diced
pepper, garlic to taste


Combine chicken broth, wine and marjoram in a saucepan and bring to a boil. Add shrimp and cook for about a minute until shrimp starts to turn pink. Remove shrimp from pan and set aside. Meanwhile cook pasta according to package directions. Combine cornstarch and milk, pour into broth mixture, and then stir until mixture becomes thick. Add cheese and stir until cheese melts. Add shrimp and heat through. Serve over cooked fettuccine noodles.

Serves one.

It sounds good!

I have to admit that if I make fettucine alfredo, I always make it the traditional way, cream and butter and all. I don't eat it very often though, so when I do it is a luxurious treat.

Your recipe looks excellent.

I have one you may want to try the next time:

Lean Fettuccine Alfredo -- Serves 4; 360 cals per serving

1/2 cp nonfat cottage cheese
1/4 cp evaporated skim milk
1/4 cp low-fat ricotta cheese
1/4 cp shredded low-fat Monterey Jack cheese
1/2 cp grated Parmesan cheese
1 tsp minced garlic
5 cps hot cooked egg noodles
2 tbl minced fresh parsley

In a blender or food processor, combine the cottage cheese, milk and ricotta; puree. Transfer to a 10" nonstick skillet; add the Monterey Jack, Parmesan and garlic. Cook and stir over medium heat for 3-5 mins or until the cheeses are melted and the sauce is smooth.

Add the noodles and parsley; stir well.

Prep time: 10 mins
Cook time: 7 mins

Per serving: 260 cals; 6.5g fat; 3.8g dietary fiber; 79mg cholesterol; 292mg sodium.


Sauteed Tomatoes and Onions -- Serves 4; 72 cals.

1 red onion, thinly sliced
2 tsp minced garlic
1/4 cp apple juice
2 tsp extra virgin olive oil
1 pint cherry tomatoes, quartered
1/2 tsp sugar
1 tbl slivered fresh basil
Salt and ground black pepper

In a 10" nonstick skillet over medium-high heat, combine the onions, garlic, apple juice and oil. Cook and stir for 5 mins or until the onions are soft but not browned. Add the tomatoes and sugar. Cook and stir for 5 mins or until the tomatoes are soft. Add the basil; stir well. Add salt and pepper to taste.

prep time: 8 mins
Cook time: 10 mins

Per serving: 72 cals; 2.7g fat; 2.1g dietary fiber; no cholesterol; 12mg sodium.

BTW, you seem to be concerned about "calories." If this is true, you should check out Prevention Magazine's cookbooks. They are wonderful.

Hi Catherine,

Thanks for the recipes, I'll definitely check them out.

As for calories... I am on a very specific sort of weight loss program that is a little difficult to describe. I don't really count anything. I have a little book that tells me how much of each item I'm allowed to eat and I just follow that. I have no idea how many calories, grams of fat, or carbs I eat every day, honestly. But hey- it's working! I just want more creative ways to eat stuff so I don't get bored.
