in an earlier enrty about beets (http://community.livejournal.com/food_
kitchenbeard suggested the following:
Wrap in foil with olive oil, s&p, and a couple of cloves of garlic.
Roast at 350 for about an houror until a knife peirces them easily.
Pull on some rubber gloves and peel them.
Puree them with the garlic, some melted butter and an egg.
Divide this eaqually among ramicans.
Cover each with a mixture of a really good bleu cheese and some shredded manchego.
Stick under a broiler until the cheese has melted and is browning. You can also do this with a hand torch.
Serve at light speed."
so that's what I did tonight. WOWZZA!
I used Cayuga Blue, a local goat cheese, as well as a wonderful raw manchego. "Hello, my name is Yamila and I am a cheese whore." Thank you for this amazing way to prepare beets. To think, I used to loathe them when I was younger.
I also challenged him for a companion to the dish. The pork sounded just right but I had leftovers from the other night's food porn extravagaza (beef stewed with leeks, garlic, rosemary, thyme, and lots of red wine) that paired well. I will have to try the pork some other night.
To make things even better, I let my three year old have at the food processor again. I couldn't peel beets fast enough and we both ended up with beautiful pink hands and giant smiles.
