my friend has requested brownies, and wants coconut and caramel, like a german chocolate cake. she doesn't want nuts. I am planning to use coconut oil as the fat, and sprinkle some coconut shreds into them. but I am stumped as to what kind of caramel to use. the chewy square candy ones? caramel sauce?

what would you use?

blueberry sugar muffins & fudgey brownies

the cupcakes i baked the other day had me craving sugar and sweets since i couldn't use them to kill my cravings because they weren't vegan. SO, you can only imagine that i had some sugary, sweet, yummy VEGAN things waiting in the oven for me not long after.

This is an absolutely delicious dinner, light and easy- could be made vegetarian by substituting veggie stock for the chicken stock. Mmm! Full of complex flavors, and yet really very straightforward to make. Enjoy!!

For my partner's birthday a couple of weeks ago I made crêpes that turned out beautifully, which was a minor miracle since I had never made them before and was sort of flying blind as far as a recipe went. I took photos of the process, so I thought I would share the recipe here.

Batter:
2 Eggs
1 C milk
1/2 C water
a few shakes of salt
1 C flour
3 Tbsp melted butter

Instructions and photos of the process under the cut )

And serve it up!

Chai-Buttermilk Cake

  • Mar. 14th, 2008 at 11:23 PM

I made this chai-flavored cake this afternoon, and was quite pleased with the result. It involves brewing a small amount of very strong chai tea and mixing it into the cake batter. The resulting cake is very nice--not particularly sweet, but moist and tender. It makes a fine dessert, but it would also work well as part of a brunch menu, or for afternoon tea. After I tried it, I decided that it would be absolutely lovely with some honey ice cream, but I didn't have time to get the ice cream maker out today. Alas.

Two more pictures of the cake. )
