A delicious minestrone soup
I love to cook but during the drab, cold winter months, I get afflicted with the disease commonly known as "I-can't-get-off-my-bottom." The main thing that suffered from this was my cooking. I would be too lazy to cook something but I always craved hot food. So I had to learn to make something that didn't take too much time to prepare but would be hot, delicious and filling.
So I found my refuge in soups. I found this recipe off a foodie blog known as Saffron Hut. It's a simple minestrone soup and the reason I really took to it was because it doesn't require stock as the base. Now, I've never made soup with stock so I don't know how delicious or un-delicious it is, but this recipe spares me from buying stock and I almost always have the ingredients necessary for the soup.
