Peanut Butter Balls
We used to make chocolate candies at Easter, mostly in molds (suckers, bunnies, chocolate covered cherries, peanut butter cups, etc), some of which we painted. I wish I knew where all my molds are.... This is probably one of my favorite candy recipes, and it's pretty easy. To cut back on sugar content here, substitute Splenda® (sucralose) for the powdered sugar and use natural peanut butter (make sure it's well blended - or make your own, it's easy!). It's also possible to find sugar free chocolate chips, but I'm not sure how they melt up.
½ cup soft butter
1 1/3 cup creamy peanut butter
¾ cup powdered sugar
12 oz bag of chocolate chips
1/3 stick of paraffin
Cream together butter and peanut butter and add powdered sugar. Melt wax and chips in double boiler and dip peanut butter mixture into chocolate. Place on wax paper to cool.
