So why did you pretend to answer the question?.

I very nearly posted that there. I can say "I haven't the foggiest" to a large majority of questions in that community, really.

ETA: For those of you who simply cannot fathom why I might want some sort of alternative to Heinz, this isn't why, but while HFCS may not be solely responsible for kids not being mindless automatons like they used to be, it's hardly an important part of a balanced diet. And I can't believe even one person in [info]domestic_snark is questioning my desire to make my own food.

Ok, there's always one, but more than a couple.

I know - it's nearly free and lasts forever if you buy the big jugs.

Maybe store-bought has sugars or something in it they're trying to avoid. Or some political "sticking it to the man" thing?

That's as may be, but she posted it. You have not adequately explained why commenting "I don't know" is better than not commenting, and why I shouldn't join a NASCAR or Victorian literature or third-world economics community and post a parallel comment to pretty much every question.

I had a recipe for meatballs once that called for some random amount of ketchup and I about gagged when I tried to make it according to specs. I'm glad I'm not the only one who can't stand it, ah the years of being looked at as weird because I like my fries as is!

oh my god. That is just bizarre. Hmmm - I have actually thought about doing this myself - I have came across recipes in a quite a few books that deal with canning - I think Joy of Cooking has a good one. But I think that is pretty much the basic ingredients right there....

Taking the time to post "I don't know LOL" is pretty worthless. Making your own ketchup seems perfectly sane to me; I make my own salad dressing and would make my own mayo if I weren't so lazy.

I question your desire to make ketchup because who eats enough of it to make it worthwhile? I can buy a bottle at Trader Joe's that is organic and doesn't have HCFS for a dollar. I can spend a few hours making ketchup, and have something that will probably be indistinguishable from the stuff in the bottle, and it will go bad in my fridge because I eat it like twice a year.

It will if I make a cup and a half all at once, but I don't have to do that. Eight ounces of unemulsified vinaigrette won't hold up either, but people who make their own salad dressing make only about enough for that salad. Extending the analogy, in fact, if I feel that a different set of ingredients would be better for this set burger or meatloaf or French-fry seasonings I have the option. It's different from the stuff in the bottle if I use different ingredients, San Marzano tomatoes, balsamico, whatever.

I can buy ketchup at Trader Joe's too. It'll taste like the ketchup you buy at Trader Joe's. If what will scratch my ketchup itch (not that I get a ketchup itch) is Trader Joe's, or Heinz for that matter, that's ideal. If I want something different, I have to seek it, and if no one provides it in a convenient fashion, I have to produce it. Or have something I don't want.

I make my own mayonnaise. Seems like folks around here would find that strange, but that just makes them philistines.

I'm fairly sure that you could have made a better case for homemade catsup had you not flown off the handle on the subject.

I think I really only flew off the handle with the one little girl who keeps shifting her line of argument according to where I strike her as most vulnerable, but since steroids have no visible affect on y behavior I may not be the best judge.

Do you have any idea how much fructose there actually is in a tablespoon of commercial ketchup? It's about a gram. How much ketchup are you eating that it's really a concern? Do you even understand what the issue is with HFCS and how fructose is different from other sugars?

If you wanted to make your own ketchup so you could make it to suit your own taste, that would make sense to me. If you wanted to make your own ketchup with fresh ingredients, that would make sense to me. But making your own ketchup using canned tomato paste as a base because you're concerned about HFCS makes you look like a tool.

That's fair. The most important reason is indeed that I want to suit my own taste; as I said, it's a reason, not my reason, and if what I want is in fact Heinz I will indeed use Heinz.

However, the complete ingredient list for Muir Glen is "organic tomato paste and naturally derived citric acid." Besides, ketchup is not my only source of HFCS, nor is it anyone else's. If I really did believe that were the only thing keeping my stepdaughter from being a mindless robot, making my own ketchup would be part of, but not nearly the entire, solution.

The Heinz Organic brand doesn't have HFCS, nor does the Trader Joe's brand. I'm sure a few others don't also.

I am not a member of cooking and don't have time to wade through all the comments here to see if you got this info in a non-smarky suggestion, but check out a book called "The Joy of Pickling". I am not a ketchup eater, but when I want it that is the recipe I use.

(I avoid everything with HFCS in it so I don't find it strange at all.)

Also-- I got on the kick to make it when my brother had some health issues and needed to eliminate a lot of items in commercially produced foods that still showed up in ketchup without HFCS so could not find a single ketchup in the store he could eat so I made him some. It is just way tastier than anything commercially produced, hands down.

It's grudgewank, but I sympathise. People who feel the need to respond to something just to say "I don't know" irritate me.

And I don't see the problem with making your own ketchup (we call it tomato sauce here). I'd probably use it more if I could be bothered making my own. I detest the smell of the bought stuff, and although we do have it in the house, I make my partner sit in another room if he wants to use it on something. I'm mean, though.

I realize that you asked for recipes/sources there and not here, but you might try one of Helen Witty's books--if there isn't a ketchup recipe in Fancy Pantry, there might be one in Good Stuff or Better Than Store-Bought.

We we're talking last night over dinner- my family has to cook for my invalid grandmother who is on a VERY LOW salt diet. Somebody made a comment about how much salt normal ketchup has and why she can't use it and it made me think of your recipe thread.

I'd be intrested and seriously thankful if you did have one?
