Resturants and composting
I was curious what do restaurants do with leftover food scraps? Are restaurants in the habit of composting?

I think that mostly depends on a) the type of restaurant and b) the area they're in. If the city supports composting in their trash program the restaurant is likely to. Not many cities do this though so not many restaurants nationwide do. In San Francisco and Oakland where there is citywide composting a lot do.

Just so you know it exists: the bakery/coffee shop I work at composts, and my boss has plans in the works to start/support a composting regime with other restaurants in the area.

So yay!

the whole foods location i work at composts - that is all their organic waste, btw, not just the prepared foods department. produce, meat, flowers, etc.

restaurants and composting

Many restaurants sell or give their scraps to companies that make animal feed out of it, such as hog chow. It's "sterilized", ground, and mixed with other animal feed. Unused and untouched food, especially from bakeries-- their leftovers,is donated to non-profit organizations such as churches for use at free or very low cost meals served to the poor. A good and worthy tax write-off.
